Fish Tacos

Heres the deal. Marinated cubed Tilapia with canola oil,chopped jalepeno,chili powder, lime juice and chopped cilantro for 20 min. Throw on a grill pan at 400 degrees, sprinkle kosher salt on fish pieces as they come out. Used sour cream instead of yogurt( thats all I had)and used the coleslaw mix in the bag(no dressing)-added thinly sliced red onion, fresh salsa and cilantro on flour tortillas(use the small ones!) Amazing! My boyfriend who hates fish tacos went back 4 times!!

Crispy Cucumbers and Tomatoes in Dill Dressing

Very good, I definetly recommend making the cucumber onion and dressing the night before. I used rice vinegar (its not as pungent as the apple cider) Then adding halved cherry tomatos about 3 hours before serving. Oh! Also make sure you seed the cucumbers. Just slice longways and use a spoon to scrape out the seeds. Only takes a second plus it Keeps your salad from getting slimy.

Ginger Glazed Mahi Mahi

Pretty dang good! I double the sauce, put the cooked hot fish on raw baby spinach (it will wilt) and spoon the sauce over the fish. A lot like Pf changs sea bass dish. Serve brown rice on the side. Boyfriend loves this!

Good Old Fashioned Pancakes

Dont be afraid to try this recipe! Its perfect! I just add a tsp of vanilla. Add to a well oiled(i use canola) hot skillet. They will be slightly crispy on the outside and soft and fluffy on the inside! It even keeps for a day or two! Love it!

Grilled Bacon Jalapeno Wraps

Recipe is good as a starting point. I followed another readers suggestion and added granulated garlic,salt, pepper and a few dashes of worcestershire sauce. Its a good idea to freeze for about 15-30 min then put in the fridge till your ready to cook. Didnt grill, I just put the oven on 375 for about an hour. Everyone loves these!

Jalapeno Corn Bread

Very light and moist. Not that dry "bready" texture that makes me dislike cornbread after two bites. Followed another reviewers suggestion of adding the jalepenos to the wet mixture. Left half the membranes and seeds for some heat. Used butter instead of oil and used my cast iron skillet. Served with room temp butter and chili. Everyone at my football party killed it.

Basic Ham and Bean Soup

Great recipe! Followed some other reviewers suggestions and pureed 1/3 of the beans. So yummy!! Made with jalepeno cornbread. Yay! Perfect when its cold outside.

Tres Leches (Milk Cake)

Followed the recipe exactly. I know what Tres Leche cake is supposed to be like. The cake turned out too dense like a brick and started to float when I added the Milk filling. Even by the next day it had not absorbed the milk filling. Tried another recipe that had a white cake mix, that turned out great. Sorry, hate to leave a bad review since there were so many good reviews before mine....:(

Slow Cooker Beef Stroganoff I

Really good! Followed other reviewers so that I would have leftovers. Used 2 1/2 lbs stew meat, 3 cans of golden mushroom soup, half a pack of onion soup mixture, 1cup of beef broth. Added 4ozs of cream cheese at the end along with a large dollop of sour cream. Tossed the noodles with some butter. Yum!

Pretty good. Added pecans and used freshly ground spices. Doubled up on cinnamon, cloves and nutmeg. Used large muffin pan. Very aromatic!
