Thai Chicken with Basil Stir Fry

Lovely! Tastes very authentic. Use holy basil if available for the killer taste. I also tried adding more red pepper flakes and then realized I should just use chilli powder instead to bring more colour and bring up the spice level...and yes it did the trick! Added broccoli and red peppers to make this a definite make again dish! :)

Broccoli with Garlic Butter and Cashews

Excellent recipe! Its a keeper for sure! I followed the advice of sauteeing the garlic in the butter first before adding the rest of the sauce, as well as toasting the cashews. I have also tried this with green beans and its great! Its a great base recipe for different flavours. For a calorie conscious meal, have also substituted the butter for sesame oil once....it gives a lovely Asian flavour.

Homemade Fresh Pumpkin Pie

Am living in India now and was craving pumpkin pie. Most recipes just ask for pumpkin puree but this one told me how to make it from scratch! I actually ended up using a pressure cooker, so my pumpkin cooked real fast. Used about 1kg(2lbs) of fresh pumpkin to get the required amount for the recipe. I was skeptical about the pie crust as it didnt require any baking/refrigeration beforehand...but my was I surprised. The pie came out so wonderful. So fresh and flavorful...it was a great hit with the family. Thank you!

Aunt Mary's Chocolate Cake

God Bless you Aunt Mary! I finally found the recipe I have been looking for-the perfect Chocolate Cake. It was moist, chocolatey and very very tasty. I teamed it with the Chocolate Cream Frosting II from this site and had a great hit with the family for my cousin's birthday! Thank You!

Easy Pancakes

Lovely pancakes! Came out perfectly. I took the advice of the other reviewers and reduced the salt to a pinch, oil to one tbsp and baking powder to 2tsp. I also made it with half cup of wholewheat flour and half cup of regular flour. Will definitely make again. My hubby's a big fan!

Basil Chicken and Pasta

Ahh...decadence indeed! Lovely creamy taste coupled with the zing of basil. I didnt have heavy cream so I used 1 1/2 cups of creamy milk instead. Added a little corn starch(1tbsp) to thicken it up. Followed other's advice and used fresh basil and roasted red peppers. The latter really added a lovely flavor to the dish. The chicken pieces were so tender and delicious. Definitely a keeper recipe!

White Chocolate Raspberry Cheesecake

Who knew restaurant quality cheesecake was so simple to make!! What an amazing recipe! Totally worth the five stars it has received thus far. I used Oreo cookies as a base and put them in a blender, with the cream, to pulverize them. Then I just added one spoon of melted butter to the powder before pressing into the springform pan. Came out perfect! As I live in India where we don't get fresh berries, I used canned strawberries instead of raspberries and it still was so yum. An amazing hit of a recipe...well done!

Best Buttercream Frosting

Awesome recipe! Just what I was looking for to frost my cupcakes with. Took the advice of another reviewer and added the flour gradually to the milk and kept on whisking. Also used icing sugar instead of granulated. I added orange flavoring instead of vanilla and added some colouring. Twas just perfect!!

Pasta, Broccoli and Chicken

May I just say YUM!! I love the fresh flavours that the veggies provide and the chicken gives that lovely extra bite. As I didn't have any basil, I made the Mexican Pesto from this site using the cilantro I had at home...and instead of pumpkin seeds I used sunflower seed kernels in that. I also made use of a useful tip from a pesto recipe by retaining a little bit of the water drained from the pasta to mix with all the ingredients to give a little moisture. I had some boneless chicken breast strips that I had marinated with lemon, crushed ginger and red chilli flakes earlier...and this was a great recipe to use it in. I added a little garlic salt to the chicken before sauteeing it in a spoonful of olive oil. I also added sliced sausage and olives to the pasta mix. Wonderful wonderful recipe which is a definite keeper!

Lemon Pudding Cake II

Absolutely divine! Despite major goofups like a drop of water in my white eggs, which made beating them into stiff peaks next to impossible, and the gas for my oven running out in the middle of baking, this pudding came out so fine. I followed the recipe exactly as given and I couldn't find anything I would want to change.

Chicken Pot Pie IX

Excellent recipe! I combined this with the butter flaky pastry recipe from this site and had a winner! Altho, its mighty rich, I warn you! Like other reviewers suggested, I did double the sauce, use the broth from the chicken and veggies, added cubed potatos and brushed egg on the bottom and top crusts. Very yummy.
