These aebelskivers came out perfectly - light, fluffy and moist on the inside and slightly crispy on the outside. Thanks for a great recipe. I will definitely make them again.

Caramel Fudge Squares

Despite the mixed reviews I decided to give this recipe a try. I followed it perfectly. When it was time to pull it out of the oven I found that it was hardly done cooking. The edges were starting to turn brown but everything else was still like batter. I didn't know what to do so I turned up the heat for another few minutes until the cake solidified. This caused the whole thing to turn a bit too dark. Perhaps had I started with a hotter oven the whole thing would have turned out better. However, taste wise, I wasn't that impressed. These squares were really spongy - perhaps because of so many eggs. I was looking for something more "fudgy" - dense and chewy.

Spicy Refrigerator Dill Pickles

I've made these several times. Conclusion - don't skimp on the ingredients. I've made them with less sugar, finding the original quite sweet. But after tasting them I discovered I liked the original taste better. I've also skimped on the herbs too much and that also caused the flavor to be too diluted. I'm not sure if I ever had exactly the amount of fresh dill, but do put in a good amount. I loved this recipe - these pickles are so delicious and beautiful to look at. Perfect summertime gifts. Thank you for posting it!!

Potato Pancakes I

These were the best potato pancakes I've ever had. They were PERFECT, and the recipe was super easy. I only had 3 potatoes, and didn't measure the flour - just added enough to thicken the batter a bit. But they came out wonderful. We ate them with sour cream or apple sauce.

Butterscotch Bread Pudding

I prepared this recipe pretty much as directed except without quite as much sugar and a tad less butter. It came out perfectly and it was certainly good....but in my opinion it seemed to be missing something. I would have preferred it more moist (I'm sure I didn't over-cook it) and with a stronger flavor. Next time I'll either use less bread or more milk/eggs, prehaps mix in some cream or 1/2 and 1/2 for richness and add cinnamon or nutmeg.

Fruit Salsa with Cinnamon Tortilla Chips

Nice, refreshing. I brought it to a baby shower and it was a hit. As always, I didn't measure exact amounts but used all the ingredients listed and it came out great.

Southern Potato Salad

This was a yummy, standard potato salad. I didn't follow the exact amounts in the recipe but did include all the ingredients except the garlic, to my taste and found it very good. I especially liked the crunchy celery which lightened it up, as well as the relish which gave it just the right amount of sweet/sour taste.

Baked Ziti III

I was looking for a quick, easy recipe and was impressed by all the reviews. Looking at the recipe I had my doubts but tried it anyway. It was simply OK - I have no idea why people went crazy over it. The sour cream dries up and has an interesting creamy consistency like ricotta - so why not use ricotta anyway? It would taste better. My idea of a great baked ziti is one that has plenty of homemade sauce and thick top layer of bubbly mozarella cheese.
