Moist Yellow Cake

Great for cupcakes. Fill them out 2/3 of the way up and bake them for 20 min. I will add almond flavor next time. They have the perfect amount of sweetness and they are so good with chocolate frosting.

Simply Guacamole

I'm the one who contributed this recipe. After reading all the reviews I should add what one of the reviewers said about the quality of the avocados. The should be HAAS. When you buy them at the store the skin shouldn't be too bumpy and soft to touch. Not too soft. Use them as soon as possible as avocados don't have a long shelf life at least the ones that are not hard as a rock. Adding lime instead of lemon for flavor. It's probably a good call. But otherwise is that SIMPLE! Keep it that way for best results and if you don't like CILANTRO this is definitely not your recipe. What makes this recipe is the cilantro and green onions do not replace or exchange. This recipe is supposed to be simple and without garlic. Those who add cumin, garlic or tomatoes need a different recipe. So don't go by the reviews too much is my experience. Funny you learn that when you submit your own recipe.

Heather's Healthy Oatmeal Surprises

I tried this recipe just like its written except for I substituted the quick oats with 7 grain mixed rolled and flaked. I wouldn't suggest this. I will also add more chocolate chips in the future.

Pesto Sauce

This would be a good recipe except for the salt amount. When I made this recipe for 30 servings it asked for way too much salt and practically ruin the recipe. Skip the salt because the parmesan has enough.

Rudy's Garlic Scape Pesto

It's a great recipe, but if you've never cooked with scapes before, you wouldn't know that you need to cut off the white (flowers) from the stems before using it. It made for a very strong pesto. I added basil to my recipe to take some of the bite out of it but I can't seem to tone it down enough for my taste

Summer Nights Eggplants

I didn't care too much for this recipe the way it is. I will make all the changes suggested or my own next time because I like the ingredients and would like to give it another chance. I like it that's pretty easy to make. I used 2 cups of breadcrumbs and it was still too dry. I would follow the suggestions of other cooks and leave the crumbs just for the topping. Definitely add cheese to the mixture and make sure not to overcook it. Don't leave out the parsley.

Frosted Rhubarb Cookies

WOW!!! For me chocolate chip won't be ever the go to cookie. These are to die for. Then again anything you taste right out of the oven tastes heavenly. I loved this recipe. It makes more like 50 cookies if you use a small ice cream scooper which I recommend so the cookies don't go flat on you. But I did put them in the fridge for a bit before putting them in the oven. The first 20 I baked I added no coconut and they were good. The second with coconut were good too if you like coconut. But I guess I like the pure taste of rhubarb. I did put 2 cups of rhubarb and a bit more. I didn't frost them as I don't care for frosting although that's a good frosting recipe. The cookie itself is not too sweet so I'm sure they well be good with frosting too.

Penne with Red Pepper Sauce and Broccoli

It's very good but it's definitely lacking something. A bit bland and you do have to adjust the flavor to your liking. I added garlic salt and onion powder. Definitely will add more onions next time.

Blueberry Coffee Cake

This is sooo good that the recipe is too short. You have to double the recipe to make sure you have seconds. The blueberries and the cream cheese should be added with a spatula to make sure you don't make the dough blue.

Pastitsio II

This was so good!!!!! My husband said he could eat it once a week. It was delicious!!! I used mini penne pasta and it worked fine. I also used ground lamb meat since it was all I had and it was a nice compliment to all the flavors. I am sure greeks would approve. =)

Spanish Flan

I love this recipe. It's the one I used to make as a child except that I used to make it in a water bath in a pressure cooker. The flavor is great but the texture was not as I remember it. This one came out very porous and not as thick and creamy as I remember it. I think next time I will try adding another egg. I like the fact that this recipe didn't call for the water bath. But I will only use half the amount of sugar. I did heat up the glass pie dish with water in the microwave to have it hot so the sugar didn't harden right away.
