Spinach with Pecans

I haven't made this particular recipe but I have been making one similiar to it. I read the reviews and a lot said it was too oniony and not enough pecan. I actually use more onion and spinach but instead of chopping the onion and only cooking til tender, I caramelize the sliced onions first with butter or olive oil and a pinch of sugar. Then add the spinach, omit the water, then add pecans. The sweetness of the caramelized onions works really well with the nutty flavor of pecan and the spinach absorbs both flavors. My 2 yr old and 4 yr old love to eat their spinach this way!

Spaghetti Squash I

Outstanding! The blend of flavors from each ingredient went together perfect. Very nice to have a new way to make this squash besides brown-sugar, butter, and cinnamon. It's a keeper in our house and would be a great dish for winter or summer. Thank you!

Venison Stew I

I've been making this for years However I add 1/2 cup of beef broth for a little extra flavor! I noticed several comments on this and other venison recipes about the "gamey" taste. I was always taught to soak the meat in milk for 10-20 minutes, then drain in a strainer over the sink before cooking! I have cooked deer meat without doing this before and I can taste a big difference! This goes for any fresh game. Hope that helps.

Easy Venison Stew

The meat was so tender! Which I usually overcook venison and it comes out tough, so I was surprised this being a slow cooker recipe, it came out so tender! I also added potates and garlic. Yum, will for sure make again! I noticed on a lot of the reviews for various venison recipes several women say they don't really like the taste of vension, try soaking the meat in milk for at least 10-20 minutes, then let drain in strainer over the sink before cooking. This helps with the "gamey" taste.

Feta Chicken

This turned out great! Everyone loved it, even my picky 3 yr old! I read the reviews first, and did not use as much feta as the recipe called for> I'm glad I didn't because to us it was just right. I think it would have to overpowering! Great Recipe, this will be a regular! Thanks!

False Cabbage Rolls

This was a good and easy meal! We love cabbage rolls and this was just as good but without all the fuss. I didn't have the tomatoe soup, so I substituted with a couple of cans of tomatoe sauce and can of diced tomatoes....Since I didn't have the thickness from the tomatoe soup, I reduced the amount of water to 1/2 cup and used 1/4 cup chicken broth for flavor! Thanks for the recipe! We all enjoyed it very much!

Island Shrimp and Rice

This recipe was excellent. Great Flavor. I did however make a few adjustments only because I didn't have the exact ingridients on hand. I used Rice-a-Roni Long Grain Wild Rice with 1/2 cup of brown Rice(I din't have enough regular brwn rice) I also used a can of Rotel instead of reg. Diced tomatoes. I also added fresh mushrooms and garlic with the onions! Great Flavor, everyone loved it and it wasn't too spicy for the kids! Thanks for a keeper!

Mozzarella Parmesan Chicken

This was so yummy! I also seasoned my chicken first with garlic powder & cajun seasoning for our tastebuds & added diced zucchini. My guests really enjoyed it. The mozzarella really makes the dish. I would, however, reduce the cooking time. My chicken was little dry. Everyones oven is a little different. Thanks for the yummy recipe!
