Neat Sloppy Joes

Quick and easy; you really don't even have to measure the ingredients. Just dump it all in, whatever looks good--you can't mess it up! I liked that it was sweet and mild.

Honey-Spice Drumsticks

These were delicious!! My family really enjoyed the flavor; hubby said, "It smells like an amazing Asian restaurant in here!" The only thing I need to be more conscientious about next time is the time on the grill; because of the high sugar content in the glaze, I turned the heat way down on the grill so as not to char the chicken...because of this, they take longer to cook than anticipated. The glaze made enough for 18 drumsticks, so it makes a lot!! Thanks.

Chicken Tortilla Soup

I converted this recipe into a crock pot dinner that worked out great! I boiled 2 chicken breasts (whole) until cooked (just a few minutes) and then added them to everything else in the pot, minus the cornstarch mixture and the toppings. Then, it all simmered merrily all day long. Later, I shredded the chicken with a fork and added the cornstarch mixture, turning the temperature from low to high for the soup to thicken. I served it with shredded cheese and cilantro, like it suggests, but also offered Greek yogurt which, when stirred in, makes the soup nice and creamy. I normally do a lot of complex cooking, but we have a new baby (!) so this recipe of can-dumping simplicity was PERFECT for a busy weeknight dinner. Everyone really enjoyed it. Thanks!! Oh, P.S.--I also dumped in a can of black beans.

Cheesy Polenta

Instead of 2 cups whole milk and 2 cups water, I just used 4 cups of skim milk. I use less salt than what is called for, adding it to taste when the polenta is creamy. Also, I like to serve it with grated parmesan instead of cheddar, especially if your dinner features Italian flavors. This recipe was great and the instructions were very good. Enjoyed by all--thank you!!

Mom's Shrimp Macaroni Salad

My husband and I loved this recipe. He suggested maintaining the recipe as a home standard and just replacing the shrimp with other types of meat for variety. It was easy and tasty!

Apple Pie Muffins

I made these without the crumb topping and they were still absolutely delicious. They are super-easy to make and the batter quantity is sufficient to fill 12 muffin cups all the way to the top for large, moist muffins!

Fluffy Biscuits

Just what I was looking for! I don't use a biscuit-cutter; I just plop them onto a greased tray by the rounded tablespoonful. You can skip the kneading and rolling steps and save a little time. They cook up great and the look is a little more rustic. YUM! My 4-year old loved them!

Amazingly Good Eggnog

Everyone LOVED this recipe. My friends kept saying that the egg nog was much better than store-bought because it was not as heavy. They said this version was so light (and I made it with half-and-half instead of light cream too!) that they could drink a lot of it! I don't know if that's such a good thing....given the rum. Anyway, I will definitely make this a holiday tradition--it was very easy to do.

Creamy White Chili

PERFECTION! We really loved this recipe--and I am not usually a white chili person. This was really great and so easy--I just cooked the chicken and then threw it and all other ingredients into the crock pot for the day. The aroma was insanely delicious and was tempting me all day long!!! I will definitely make this again--THANK YOU!

Latin-Inspired Spicy Cream Chicken Stew

SUPER-DELICIOUS! I cut the recipe in half, which was plenty for our family of 4, and added 1/2 brick of cream cheese without removing any cooking liquid. It was a great, stew-like consistency. I substituted my own spices for the taco seasoning (cumin, paprika, chile powder, coriander). I served it over a bed of rice with diced avocados and queso cotija for topping, but it would also make a great filling for burritos! Everyone loved it and I will definitely make it again--SO QUICK AND EASY!! Thanks!

Bowler Beef Marinade

What a nice, easy marinade! We all really enjoyed this...I cut down slightly on the liquids in the recipe, because I only had 2 steaks to cook, but kept the seasonings pretty much the same. The meat was very tender and we all enjoyed the flavor. Thanks!

Hawaiian Bruddah Potato Mac (Macaroni) Salad

Spectacular! I am not one for egg salads or potato salads, generally, but the dressing was really delicious and I highly recommend this recipe. LOVED the macaroni in it and the curry and cilantro flavors. I will definitely make this again!! (Reduced the amount of curry, as per the other reviewers).
