Easy Spinach Souffle

Banana-Zucchini Bread

This recipe can be halved with excellent results. My entire family really enjoyed it--moist and delicious and healthy! It is exceptionally good with whipped cream cheese! Also freezes well! I substituted currants for the cranberries and pecans for the walnuts, just because it's what I had on-hand. Thanks for sharing this one!

Apple Betty

It doesn't get better, or easier, than this! The perfect ending to a Fall feast! This is so quick to prep and can bake while you dine so as to be served warm. My husband just loves apple desserts and this was so effortless, yet would hold its own against a truly "classy" dessert. Comforting and festive. All ingredients are kitchen staples, so it can be thrown together on a whim, which is what I did!

Fluffy Biscuits

Just what I was looking for! I don't use a biscuit-cutter; I just plop them onto a greased tray by the rounded tablespoonful. You can skip the kneading and rolling steps and save a little time. They cook up great and the look is a little more rustic. YUM! My 4-year old loved them!

Apple Pie Muffins

I made these without the crumb topping and they were still absolutely delicious. They are super-easy to make and the batter quantity is sufficient to fill 12 muffin cups all the way to the top for large, moist muffins!

Vienna Schnitzel

Perfect. I know this recipe as "Milanesa" and usually prepare it with beef. This was a delicious and foolproof recipe and I will use it again and again. My 4-year old completed the whole process with me and when I flipped the schnitzels over to reveal them golden brown he said, "THIS IS AWESOME!" It was priceless.

Sugar Cookie Icing

Wonderful! Easy to tint and easy to work with. I used a spoon instead of a brush and it was just fine. I love the glossy look and the way the icing stays put on the cookie!

PERFECT!!!! I grew up on these and it was such a treat to have the taste recreated EXACTLY as I remembered it. I omit the rutabaga, as I am generally a fan but do not care for it in pasties. Thank you so much for this recipe!!

Shrimp and Artichoke Linguine

Quick and easy...a family-pleaser! The flavors are light and nicely balanced. I also added a bunch of spinach with the artichoke for a little more nutrition. Eat this delicate meal...and treat yourself to dessert!

Southern Yank Pulled Pork BBQ

Thank you so much for a great, homemade recipe for pulled pork! It is absolutely delicious; I love a sweet BBQ sauce with pork...guests can always add the the spice to their own comfort level later. I will use this as my staple pulled pork recipe!! AWESOME!

Brown Sugar Cut-Out Cookies and Icing

I received loads of compliments on these cookies (do not overbake--they do not appear golden brown but if you bake too long they will be hard). One great thing about this recipe is that the frosting amount is perfect for the cookies. Normally I end up with a half a bowl of frosting left over!!

Angel Food Cake Roll

Weeeeelllllll......I don't have a jelly roll pan, so I baked the cake in a smaller size pan than what was required by the recipe. Once I lathered on the filling generously, it didn't want to roll back up. No worries! I just served it as was: angel food cake with strawberry whipped topping. It was delicious!!! I would definitely make it again...with the right pan.

Springfield Style Cashew Chicken I

Stellar recipe!! I made it with half chicken, half tofu (prepared just like the chicken) and it was great. I also stir-fried some carrots and celery and added it to the mix. I substituted a small amount of fish sauce for the oyster sauce, as I had none. It is a mild sauce, but you could surely kick it up on your own. I must also add that the presentation is BEAUTIFUL--it looked like something you would get at a good Chinese restaurant!! Def. make again!!
