Cheesy Polenta

Reviewed: May 7, 2012
Instead of 2 cups whole milk and 2 cups water, I just used 4 cups of skim milk. I use less salt than what is called for, adding it to taste when the polenta is creamy. Also, I like to serve it with grated parmesan instead of cheddar, especially if your dinner features Italian flavors. This recipe was great and the instructions were very good. Enjoyed by all--thank you!!

Dog Treats I

Reviewed: Apr. 17, 2012
Our doggy really loved these treats for his birthday. He ate too many, though, and got the runnies. Oops! Hey--we felt like he should be able to over-indulge a little on his big day. From now on, just one a day. Also, this recipe makes a TON of cookies--we've got a lot of them and I ended up freezing half of the dough for another time.

Beet, Orange and Apple Salad

Reviewed: Apr. 17, 2012
This salad was a delightful surprise! My husband and I both really enjoyed it. I substituted a fig balsamic vinegar for the raspberry one with great results and served it over spring mix greens, rather than beet greens. Thanks!!

Logan Bread

Reviewed: Apr. 17, 2012
FANTASTIC recipe! This bread came out great--absolutely beautiful--and delicious. I used raisins and figs and eliminated the seeds this time, which made it taste like a Fig Newton cake. Really yummy--my 5-year old couldn't get enough!! Thanks! Perfect to take along camping for breakfast.

Cowboy Casserole

Reviewed: Apr. 17, 2012
This was super-yummy! I made it ahead of time and reheated it over the camp stove. I also took one reviewer's suggestion and served it in sourdough bread bowls which was not only delicious, but less messy too. Thanks!

Sloppy Joe Sandwiches

Reviewed: Apr. 17, 2012
I was prepared for the recipe to be on the sweeter side, based on the other reviews, and it definitely is, but if you like a sweeter Sloppy Joe then this one's for you! My whole family really enjoyed this; I served it over macaroni instead of on buns this time.

This was a great recipe; I really enjoyed the flavors and it's a great way to eat fish (not my favorite meat). So good!

Diana's Guinness® Chocolate Cake with Guinness Chocolate Icing

Reviewed: Mar. 24, 2012
This was the ugliest cake I've ever made--it fell apart when I took it out of the pans and crumbled like crazy! I used a lot of icing as glue to piece it together; it really looked a mess. The TASTE, however, is quite another matter. It was delicious! I LOVED the icing (best chocolate icing EVER and I will use it ever after) and the cake is really rich and chocolatey. I would try it again and hope for better results next time as far as the appearance, but my family has really enjoyed eating it!

Perfect recipe; exactly what I was hoping for. It's so easy and they are just delicious (especially filled with dulce de leche as I used to eat them in Argentina).

This recipe was flawless for me!!! It came out so beautiful; rose up just perfectly in the bread machine and the dough was wonderful to work with. Thanks for a super-festive and tasty recipe that my whole family loved. (I've had king cake in the past and this was the yummiest I've ever tried!)

Awesome Italian Hoagie Spread

This was a yummy treat. It was a little heavy on the mayo for me, so I will reduce it next time. A nice flavor combo!!

Pickled Carrot Salad

Quite delicious and a lovely way to serve what is, in our house, a very common dinner veggie in a whole new way! Thanks!! Also, these keep in the fridge for a long time, which is a plus!

Indian Saag

Reviewed: Feb. 21, 2012
I really enjoyed this recipe! I wasn't sure what to expect; had never tried this before, but I bought some mustard greens and bok choy and didn't know what to do with them! It's fun to discover great new flavors by accident. Thanks for a lovely recipe; I would def make again (and highly recommend serving with the Greek yogurt). Also, one could add stir-fried meat and beans like chick peas for a one-dish meal!

Risotto alla Milanese

Good risotto. I carmelized the onions, rather than just cooking til soft. Highly recommend doing this! Also, I did not use the beef marrow and it was still very flavorful.

This was a terrific red beans and rice recipe!! My husband said, "You could win awards with this dinner!" WOW!!!! Thanks so much--and I didn't even need the ham hock; it's delicious with some good andouille sausage!
