Latin-Inspired Spicy Cream Chicken Stew

SUPER-DELICIOUS! I cut the recipe in half, which was plenty for our family of 4, and added 1/2 brick of cream cheese without removing any cooking liquid. It was a great, stew-like consistency. I substituted my own spices for the taco seasoning (cumin, paprika, chile powder, coriander). I served it over a bed of rice with diced avocados and queso cotija for topping, but it would also make a great filling for burritos! Everyone loved it and I will definitely make it again--SO QUICK AND EASY!! Thanks!

Slow Cooker Beef and Potato Curry

This was really great and my 8-year old said he loved the "gravy." It was a hit with the whole fam--even the 1-yr old! Def make again! Thank you. Just a note: I used tomato paste, not sauce.

Caramelized Spicy Pumpkin Seeds

Here's the thing with this recipe--the parchment paper kept my seeds from cooking properly! It took forever and they still weren't done, but I had already done the rest of the steps. No matter--the next day, I threw them back onto an ungreased cookie tray, seasonings and all, and baked them 30 minutes more at 350. Voilá! Perfection. So, cooking method was a bust for me, but since they turned out delicious in the end, I gotta go 5 stars!! Also, added double the cinnamon; it was a little heavy on the cumin for me.

Spaghetti Squash with Creamy Pumpkin Sauce

This was a nice Fall dish and very enjoyable. I added smoked paprika, since it wanted a little spice for our palates. Also, served with fried tofu as the main course, but would make a delightful side dish as well. I put the whole can of the pumpkin in and was generous with the yogurt and parmie, too. Also, I didn't have truffle oil, but it was still tasty.

Mexican Chocolate Chili

I substituted chorizo for the ground round, which is a MUST in my mind, for Mexican chili. Also, did not add any water...it was mild, which was good for my kids, but if you like it spicier I would recommend kicking up the chili powder called for. Also, serve with Cotija cheese, crumbled. Very, very tasty. Will def make again. Thanks!

Slow Cooker Butter Chicken

My family really liked this! I had to eliminate some items due to spiciness (I have young kiddos) and their unavailability in the grocery store, but it still had great flavor. I did not use curry paste, tandoori masala, or the cardamom pods, but I upped the quantity of the garam masala and the curry powder to 1 Tbsp each. Also, I added chopped zucchini and fresh spinach to the slow cooker for the final hour of cooking. YUM! Serve with Naan.

Quick Savory Cranberry Glazed Pork Loin Roast

How yummy! The pork loin was very juicy and the sauce is tasty. I made double the sauce, as suggested in the recipe, but it was not necessary and I ended up with a TON left over. Also, my pork loin was quite small and was done in 30 minutes. I only basted it twice during the cooking time; about every 12 minutes.

Ensalada Rusa

I eliminated the potato to make a beet and egg salad and really loved it. It's great when the beets take center-stage; they're so tasty! Also, I used plain Greek yogurt in lieu of the mayo to add protein and make it healthier in general. Pretty color, of course, too! I used to eat this in Argentina all the time. Thanks!

Slow Cooker Mashed Potatoes and Cauliflower

AWESOME!! Perfect for a feast, when you need the oven for other dishes. I used 5 lbs potatoes, skins on, and omitted the cauliflower. I used Greek yogurt instead of sour cream. Hearty and delicious!!! Thanks :)
