Black Magic Cake

Superb easy recipe for a homemade cake! The coffee really brings out the chocolate flavor. It was tender and rich and baked evenly too. I made two single layer cakes frosted with white buttercream and topped with chocolate ganache. Amazing! I can't wait to make this again!

Chocolate Ganache

Perfect ganache!! I used 1/2 Tbsp. vanilla in place of the dark rum. This set up beautifully over buttercream and was remarkably easy with which to work. Oh yeah, it tasted divine too!

Bread and Celery Stuffing

The best stuffing recipe! Simple and oh so delicious! My family asks me to make the stuffing for holiday parties. I use a mix of white and wheat breads. Delicious!!

Cream Cheese Cookies III

delicious recipe, a hit at work. I changed a few things. I used sliced almonds and orange juice instead of the walnuts and lemon juice. I pulsed the almonds in a blender to create a finer texture. I also added 1 c. white chocolate chips to the cream cheese batter and topped it with 1 c. semisweet choc chips. Will definitely make again!

Crustless Spinach Quiche

I made this for a mother's day brunch. It was fabulous! I liked that the recipe didn't have a crust. Leftovers were very tasty too. I used reduced fat cheddar instead of Muenster cheese.

Better Than Sex Cake II

Wonderful cake! It's dangerous though, I could eat the whole thing!! I'm a teacher and I recently made this for some of my 7th grade students (of course I didn't tell them the NAME of the cake). Well, those kids absolutely devoured this cake! I had to stop some of them from going back for their 4th piece. I made some variations: added 1/2 cup mini chocolate chips into batter, poked holes with skewer and small wooden spoon instead of slits, sprinkled cake with toffee bits and mini chips before frosting with real whipped cream, drizzled top with choc. syrup and mini chips. Let it sit overnight or several hours before serving.

Broccoli and Tortellini Salad

This is outstanding! I could eat this for days...and I did! I used dried cranberries instead of raisins, and bi-color tortellini which made it very pretty (couldn't find tri-color). I also used pre-cut fresh broccoli, a great time-saver. Highly recommended!!

Peanut Butter Marshmallow Squares

These are really delicious and very easy! I kept going back for more! I made a few changes. Instead of walnuts, I used chopped peanuts. I also toasted the coconut for added flavor (spread coconut on baking sheet and toast in 375 degree oven for 5-7 minutes, stirring every few minutes, watch carefully)

American Lasagna

Good basic recipe - nothing really to rave about, but can be dressed up with improvements. I added an extra container of ricotta and chopped spinach. I really think the extra ricotta cheese is needed in this recipe.

Giant Chocolate Chip Cookie

well..maybe I did something wrong, but this did not turn out for me, even though I bake cookies very frequently. I made the recipe as bar cookies in a 10x15 pan. They were dry and didn't have much flavor. Maybe it was the mixture of milk chocolate and peanut butter chips that I used. Better luck next time?

Whole Wheat Beer Bread

What a great recipe! And to think, people pay around $6 for the pre-made beer bread mix. I think this tastes much better than beer bread I've tasted made from a mix. I've made this twice now. You can vary the ratio of whole wheat and white flour to suit your taste, just make sure the total is 3cups of flour. I recommend melting 1/4c. to 1/3c. butter and pouring over the top BEFORE baking. This bread keeps well for several days, wrapped tightly(if it lasts that long). When I made it for guests, I broke it up into chunks and served it with dill dip as an appetizer- delicious!!!UPDATE - for people who think this has a bad aftertaste, try using ALUMINUM-FREE BAKING POWDER (Rumsford brand is good). The aluminum in most baking powders probably would leave an aftertaste with 4.5 teaspoons!

Lemon Cake

Great cake!! I used a lemon cake and added a few tablespoons of fresh lemon juice in place of some of the water in the cake. My coworkers gobbled this up and my boss wanted the recipe after I took this to a work luncheon. Will definitely make again, very refreshing and light tasting!

This is delicious and unique! I love the combination of zuchinni, beans, and corn. I omitted the poblano and added about 1 tsp. of ground cumin and 1 tsp. of chili powder to perk up the flavors. I served with low-fat cheddar cheese and taco sauce. I can't wait to have this again!!

California Bean Dip

This is fabulous and oh so tasty. My guests were apprehensive when just looking at the dip, but after a few bites, they were addicted (and I was too). This can be eaten as a salad too. In fact, I found myself sneaking bites right out of the bowl. I used Ken's light Olive Oil Vinagrette (very yummy dressing) and Kraft light ranch dressing. I'm making this for a luncheon tomorrow, can't wait to try it again!
