Baked Shrimp with Feta and Tomato

I've made this several times and it always tastes great! I'm not crazy about oregano, so I leave it off and just add more garlic. We never have any leftovers!

Pork Chops with Pears

Sprayed the skillet with Pam instead of using butter, but followed the recipe exactly as written and it was great! Am having it tonight and will probably do as others did and add a little more mustard. This one is a keeper!

Quick Tuna Casserole

Sooo simple and we loved it! First time I cooked as directed except for the peas (can't stand them!). Second time I put the fried onions on the top as someone suggested -- husband really liked this! Tonight we are adding mushrooms!

Shrimp Scampi III

Very easy to make! I substitued rice for the angel hair pasta and cut down on the amount of butter, but was very happy with the end results! Will def. make this one again!

Artichoke Chicken

This ones a keeper! I didn't feel like using the skillet so I baked it for 40 minutes at 425. I didn't have all the ingredients so used minced garlic and cheddar cheese. I also used the half sour cream - half mayonaise which I thought worked out well. Wonderful over penne pasta! Will def. be putting it into the monthly rotation!

Easy Cheesy Skillet Chicken

I only had shredded cheddar so used it instead. I also didn't feel like standing in front of the stove so I baked it (40 minutes at 425) which turned out suprisingly well! Will make this one again!

Amazingly Easy Irish Soda Bread

Loved the taste, but as someone else mentioned - it seemed like too much flour. I ended up adding more buttermilk and that helped. Will try this one again one day!

Shrimp Fettuccine Alfredo

Great taste. I had trouble getting the sauce to thicken. Finally gave up the stirring and added a tablespoon of flour to help it along. Since I used a cup and 1/2 of half and half - I also added about 4 more tablespoons of Parmesan cheese. Good dish overall, but wish it had been a little thicker sauce.

Baby Spinach Omelet

Nice recipe. I like my eggs a little fluffier, so I think next time I will add some milk. I didn't have onion powder, but did have onion. I sauteed them to a nice golden brown, then added them when I poured the omelet mix into the pan. Will def. make again, but may try some mushroom to give it a little more filling.

Baked Chicken Reuben

I love sauerkraut and thought this would be an awesome dish, but it just didn't have the taste I exprected. My husband thought it was pretty good though and he doesn't care for sauerkraut - so I gave it a three!

Tofu Peanut Stir-Fry

Prep time says 15 minutes, but apparently doesn't include the time it takes to make the sauce. Just a lot more work than I expected. Oddly, I am usually the one that likes new dishes and husband doesn't, but this time he liked it and I just didn't care for the taste. Not the worst thing I ever had, but I won't be making it again.

Laura's Unbelievable Chicken and Pasta

To be fair - I discovered I didn't have any penne pasta and I used linguine instead, but something was just off on this one. I found the chicken rather bland and the sauce never did get thick at all. Maybe that's okay over penne pasta, but it doesn't work very well over linguine.

Special Irish Beef Stew

This was a disaster! I followed the recipe to the letter (except for using extra stour which I'll talk about in a moment). The vegetables did NOT get done after an hour of simemring like the recipe said to do.Prep Time is WAY over twenty minutes unless you buy vegetables that are already prewashed and precut. And...someone else warned on here about using Guiness Extra Stout --- I repeat the warning - DO NOT USE GUINESS EXTRA STOUT. Horrid, horrid bitter taste if you do!!!! Really awful and brown sugar did NOT help!

Italian Spaghetti Sauce with Meatballs

This was a huge disappointment! The meatballs were not completely done despite being in the sauce for more than the two hours (it was closer to three!). We didn't find this out, however, until the food was on the plate and we were eating (should have cut one open - my mistake!). I had to heat both plates in the microwave to finish cooking the meat. The sauce was okay, but really needed a little more kick to it. Not sure what it needed, but just didn't do it for either one of us. Won't be trying this one again.
