Peppy's Pita Bread

Reviewed: Dec. 10, 2009
very good, looked beautiful, and tasted delicous! I added some seasonings to the dough to make it have more of a flavor. My husband poked a hole in a few remaining (I made 2 batches and rolled them smaller) and put honey in them. Very very yummy!

Sweet Dinner Rolls

Reviewed: Dec. 10, 2009
these were heavenly! I've made these several times. I have always made them as rolls and not as cresents. The first few times I didn't put butter in them before forming as rolls. For Thanksgiving I put butter in them and then formed a ball. Let them rise per the directions, then baked. When I removed them from the oven I rubbed cold butter on the top so it would melt a bit. I made 4 batches of these and my rolls were gone before anything else at the table! Make sure you put butter in there for the second rising, it make a huge difference! Also, I didn't have a bread machine, so when I mix the butter and egg into the dough I have to use a hand mixer or it'll never get incorporated enough. Other people have commented on how to proof the dough, etc in other reviews so I won't go into that in here. Thanks for the recipe Donna!

Fluffy Pancakes

Reviewed: Dec. 10, 2009
absolutely delicious! I am not a huge pancake fan, but this was just yummy! The first time I made it I didn't read clearly and put 2 T melted butter in the pan. Then the second time I read it I realized I was supposed to but it in the batter - BIG difference! the amount of pancakes was perfect for my husband, myself, and 2 tiny children. Only because we had hashbrowns too. I definitely recommend you double the recipe if you're hungry or have older children.

Tomato Bacon Grilled Cheese

Reviewed: May 8, 2009
Delicious! I spread mayo on each slice of bread, layered cheese, tomato, and bacon over it. We broiled them open faced - so each slice of bread had the goodies layered on them, for a doubled stacked sandwich. I put a bit of salt and pepper on my tomato (I am pregnant, so I crave a lot of salt), but you may not want to. I think next time I'm going to add carmalized onions, or even fry them up a bit to make them crispy. My husband who is not a big fan of tomatoes (he likes them alright, just not a HUGE fan) loved this sandwich. We will definitely be making these again and again!

Baked Bar-be-Que Chicken

Reviewed: Apr. 30, 2009
heavenly! I baked 4 chicken breasts with the whole bottle of bbq sauce - it was sooo yummy. I cut the cooking time in half at each step - for 45 minutes total cooking time. My husband, who is not a big fan of BBQ (not sure why, it's the best) loved it and wanted more! Since I love sauce, I would either make sure the baking dish is nearby with the leftover sauce, or I'd heat up some extra sauce to dip in. The chicken was so moist.

Southwestern Haystacks

Reviewed: Nov. 4, 2008
I would've given this recipe 4 1/2 stars, but gave 5 instead to up the rating on this yummy meal. It was super easy, super quick, and tasty. I added 1 onion to the meat. Seasoned with worceshtire sauce, tabasco, chilli powder, cumin, and cayenne in addition to the already called for spices. I then added 1/2 jar salsa to the mixture because I wanted it a bit more saucy. I am not a kidney bean fan, but this was delicious. The cheese and sour cream are a must - even for my husband who isn't big on either of them. The whole family loved it, and we will definitely be making this again and again!

Layered Chicken and Black Bean Enchilada Casserole

Reviewed: Aug. 23, 2008
Yummmmy! This was soo good! For being a casserole it wasn't so heavy and gooey. Perfect! I stuck with the recipe mostly. I didn't measure the amount of cilantro, so I probably added more (we love cilantro). I seasoned the chicken a bit more with other spices (chili powder, cumin, salt, pepper, a bit of whole coriander - i don't like it much, onion powder, garlic powder). The only major change was adding onions. I cut up 1/4 of a laarrgge onion and mixed it in with the chicken/bean mixture. I left them raw so when eating the casserole it added a bit of crunch and freshness to the dish! Try it with onions, it's wonderful! My husband and two year old LOVED this dish and were begging for more! Also served it with spanish rice. Oh! one more thing - I am not a fan of enchilada sauce, but the flavors all meld together perfectly and the sauce was very good.

Pizza Casserole

Reviewed: Aug. 23, 2008
Very very good! My husband and two year old wolfed it down! I cooked it exactly following the recipe. Except: I always get confused about 2 c noodles - is that 16 oz? or two dry cups? so I measured 2 cups, and then didn't think that looked like enough, so I added 2 more cups. When I added the sauce and milk, I thought it looked a bit dry, so I added 1 cup more sauce and 2T more milk. It was wonderful! The flavors were even stronger the next day as leftovers. My hubby hates leftovers, but he was excited to be eating this again! Yay!

Smooth Sailing Sugar Cookies

Reviewed: Oct. 3, 2007
had to add more milk to dough, it was too dry. the frosting recipe needed more milk too. when all was done, the cookies were a little bland and dry still and the frosting was lacking. i'll give the cookies another shot, but with a different frosting recipe.

Italian Creme Layer Cake

Reviewed: Jan. 30, 2007
Absolutely perfect! My family who doesn't like pecans, loved this cake! I didn't put the pecans in the icing, I just chopped them up pretty small and put them on the sides of the cake and on the center of the cake (a filled in circle) with some coconut around it in a circle. it looked goregeous! i don't know if anyone else knows this already, but i made it the night before, and stored it in the fridge. don't do that. if you just leave it on a cake platter with a dome over it, it stays moist and soft and light. in the fridge, it's still divine, just thicker, heavier, and less moist. ETA: I made this as a 4 tiered wedding cake and it was beautiful! I swirled the frosting and made a ribbon border with chopped pecans on each tier. It was devoured by all who came. The bride and groom said that when they ate their top tier a year later (after being frozen for a whole year) it tasted like I had just made it that same day!
