Slow Cooker Cheese Steaks

Reviewed: Jul. 10, 2014
I gave 5-stars because the entire family liked this one. Only substitutes I made were sirloin steak and grated italian cheese, simply because that's what I had on hand. And I put open-faced under broiler instead of wrapping in tin foil because we like the toasted bread, but I think would be good either way.

Chicken with Quinoa and Veggies

Reviewed: Jul. 6, 2014
Good recipe, but the flavor mix was different for us personally. I added some cumin to the leftovers and it was a nice addition to the lime flavor. I may try again and just omit the lime juice, add a bit more veggies, and some added fresh basil after cooking. Also liked rice over quinoa.

Cube Steak Parmesan

Reviewed: Mar. 21, 2014
I used 1/2 jar or traditional ragu, and baked almost an hour to tenderize steak. The family members who didn't appreciate it still had spaghetti with marinara. I would try this one again.

Most Requested Banana Chocolate Chip Muffins

Reviewed: Apr. 12, 2013
I used a tip from another reviewer, and replaced 3 T of the butter with 9 T flaxseed. Also used half all-purpose flour & half whole-wheat pastry flour. I cut back to 2/3 c. sugar & 1/2 c. choc chips and still very good.

Cranberry Orange Loaf

Reviewed: Mar. 18, 2013
I thought this was delicious. I used cranberries out of my freezer, but did thaw first (thanks to another reviewer's comments) and this worked well. Also did a little bit of the orange juice/powdered sugar glaze (thank you to another reviewer). 3 stars only because the rest of my family didn't like them.

Rhubarb Cake I

Reviewed: May 12, 2012
Took advice of other reviewers and used 3 cups of rhubarb. Great flavor. Only rated three-stars because it had more or a bread-pudding consistency than cake-like.

Classic Peanut Butter Cookies

Very tasty. Will use this recipe again. Only bad thing is they didn't freeze up well - crumbly.

Barbeque Ham

Reviewed: Nov. 26, 2011
I borrowed this idea for some extra ham... fried the onion, placed ham on top, and poured some leftover sloppy jo mixture (which is about the same as other ingredients, minus the vinegar and worceshershire). Served with mashed potatoes and the whole family loved it!

Swiss Potato Soup

Reviewed: Nov. 8, 2011
After reading other reviews, I increased to 1/2 medium onion, 3 cups potatoes, and substituted 1 can chicken broth & 1 bouillon cube (instead of 1 c water & 3 bouillon cubes). Also added 2 c frozen corn. This hit the spot on a cold Nebraska day!

Fresh Pear Bread

Reviewed: Oct. 10, 2011
I used 1 1/2 c finely chopped pears. Edited to 3 tsp. cinnamon, 2 T milk instead of water, only 1/2 c sugar, small box of instant sugar-free pudding mix. The batter seemed quite thick, but baked up into a tasty bread.

Canned Apple Pie Filling

Reviewed: Sep. 26, 2011
I'm not overly impressed. I think I'll stick with canning chunky cinnamon applesauce, and freezing my apple pies.

Mom's Zucchini Bread

Reviewed: Sep. 3, 2011
I got brave, and used 3/4 c applesauce & 1/4 c canola oil. Also used 1 T lemon juice instead of vanilla (just because it seemed like the zucchini bread thing to do). Used this advice from other reviewers: cut back to 2 c sugar; increased to 3 c zucchini (because I had plenty). Turned out great, and will definately make again.

Rhubarb Sauce II

Substituted 1/2 of the rhubarb with frozen strawberries (because I was short on rhubarb). Delicious recipe. So good, I was cleaning out the skillet with a piece of bread.

Great way to use up my extra fruit jam from last season! Thx. I cut sugar to 1/3 c, and baked at 350 degrees. Almost a cornbread texture.
