Rhubarb Cake I

Took advice of other reviewers and used 3 cups of rhubarb. Great flavor. Only rated three-stars because it had more or a bread-pudding consistency than cake-like.

Barbeque Ham

I borrowed this idea for some extra ham... fried the onion, placed ham on top, and poured some leftover sloppy jo mixture (which is about the same as other ingredients, minus the vinegar and worceshershire). Served with mashed potatoes and the whole family loved it!

Swiss Potato Soup

After reading other reviews, I increased to 1/2 medium onion, 3 cups potatoes, and substituted 1 can chicken broth & 1 bouillon cube (instead of 1 c water & 3 bouillon cubes). Also added 2 c frozen corn. This hit the spot on a cold Nebraska day!

Fresh Pear Bread

I used 1 1/2 c finely chopped pears. Edited to 3 tsp. cinnamon, 2 T milk instead of water, only 1/2 c sugar, small box of instant sugar-free pudding mix. The batter seemed quite thick, but baked up into a tasty bread.

Mom's Zucchini Bread

I got brave, and used 3/4 c applesauce & 1/4 c canola oil. Also used 1 T lemon juice instead of vanilla (just because it seemed like the zucchini bread thing to do). Used this advice from other reviewers: cut back to 2 c sugar; increased to 3 c zucchini (because I had plenty). Turned out great, and will definately make again.

Rhubarb Sauce II

Substituted 1/2 of the rhubarb with frozen strawberries (because I was short on rhubarb). Delicious recipe. So good, I was cleaning out the skillet with a piece of bread.

Morning Glory Muffins I

1 c flour, 1 c ww flour, 3/4 c sugar, 2 whole eggs, 3 T veg oil, 1/2 c vanilla yogurt, 1/4 c ground flaxseed, no wheatgerm, no raisens or nuts (kid's pref). the rest the same. seemed a bit thick, but turned out delicious. Will definately add some English walnuts next time.

Colleen's Slow Cooker Jambalaya

I made on stovetop because of time, and made a few adjustments. Seasoned cubed chicken with salt and chayenne and cooked in heavy skillet, removed. Sauted onion, pepper, & 2 cloves minced garlic for a couple minutes, then put all ingredients together in same heavy skillet (minus additional cayenne and cajun because it was spicy enough for my taste), and simmered on low for about 90 minutes.

Banana Oat Bars

I think that "baked oatmeal" would be a better description. I used various advice from other readers: 1/4 c white sugar & 1/4 c brown sugar; 1 1/2 tsp baking powder; 1 whole egg; added 2 scoops chocolate protein powder. I liked them, but not a family fav.

Granola

No dates, so used total 1 c mashed bananas. Also used agave nectar instead of sugar. Not terribly flavorful - maybe needs a tsp salt. Also a bit chewy. Not my favorite granola recipe, but it used up some overripe bananas in a new way.

Crispy Fried Chicken

I did use a lot less oil. I don't regularl fry food because of the smell it leaves in the house. But it was delicious. Even the kids said it was better than KFC.

Absolute Best Liver and Onions

This may be a a four or five star recipe, but my family would be generous to give one star. Did not turn them into converts; I remember liking liver as a child, but did not like this. I did, however, put the onions on bread and that was quite tasty.

Zippy Beef Casserole
