Pork Chops with Sour Cream and Mushroom Sauce

Turkey Burger Pie

I used shredded colby/jack blend cheese instead of cheddar (just my personal choice). The flavor was great! Not overpowering. My children (ages 6, 9 & 11) all actually liked it! (This rarely happens). Just be sure to spray the pan with non-stick cooking spray. This would be good with sausage in place of the turkey for a great all-in-one breakfast meal.

Saffron Rice

This is a great way to showcase the saffron. I don't like the flavor of butter, so I sauteed my onions in extra virgin olive oil. I didn't bother with the food coloring - it's very appealing with the fresh, green parsley in it. I also substituted chicken broth in place of water.

Simmered Swiss Steak

I usually grill all my steaks. For a change, I decided to give this a try and it was fantastic! I doubled the sauce to put it on spaghetti, also! Yum! Thanks for sharing!

Luscious Lima Bean Soup

I had a bag of dried limas just laying around for months. This soup seemed so simple, that I knew it would be good. I didn't have any leeks or shallots, so I used a red onion instead. I added a bay leaf and garlic, too. I soaked the beans overnight, then threw everything together in the slow cooker on high for 5 hours. When it was done, I wilted about 4 cups of fresh spinach into it. So easy and yummy! It made about 10 servings of about 1 1/4 cups each.

Pumpkin Chipotle Pasta Sauce

I am sitting here eating this and it's so good, I had to rate it before I was even finished! To make it vegan, I omitted the butter (used olive oil spray) and chicken broth (used vegan chix flavored). I used fat free soy milk, too. I also used about 3/4 of an onion, chopped. I started making this before realizing I didn't have any sage or coriander, so I just used Italian blend instead. I served it over whole wheat penne. My throat is feeling the heat and I am loving this! For anyone on weight watchers, making it without the butter makes this a Core recipe! Bonus :)

Chicken with Garlic, Basil, and Parsley

This turned out moist & juicy. I added a couple tablespoons of balsamic vinegar before adding the spices on top. Also, didn't have fresh tomatoes, so I piled canned, diced tomatoes on top - loved it!

Butternut Squash Bisque

Like most others, I also roasted the squash first. I also added a finely diced hot chili pepper for a nice warm kick. Counting WW points, so no butter or cream. Just used the canola for sauteing and low-fat milk stirred in at the end. So filling - mine was close to 6 servings. Made some yummy homemade rye bread for dipping. Perfect for this cooler weather. Thanks!

Crazy Crust Pizza Dough

I'm giving this 5 stars with my few changes: 1 egg instead of 2, an extra 1/2 cup of flour, 1 tsp of baking powder and I added 1 T of Italian seasoning along with the oregano. This is a wonderful base for a simple pizza. YUM!

Spicy Chipotle Turkey Burgers

This was awesome! I didn't have any canned chipotle, so I used the Knorr brand chipotle cube & crumbled it in. Also crumbled another cube & mixed it with the mayo. Made for a very intense flavor - just loved it! (You can find the Knorr brand cubes for chipotle and cilanto and onion in the Mexican food section.)

Spicy Sweet Potato and Coconut Soup

This was very unusual for my taste. I wasn't sure if I liked it until about the 4th spoonful. Then, I finally felt the heat in the back of my mouth. Then, it made me want to keep eating it. It's always nice to try new things.

3 hours was too long - my ribs burnt. But, I'm still giving this 4 stars because the sauce itself was delicious. I will use the sauce again - but most likely on chicken instead. Thanks!
