Real Texas Chili

My first time making a chili that wasn't tomato based. I did add kidney beans at the request of others and was glad that I did. The chili was very filling and flavorful.

Chicken Taquitos

Absolutely delicious. Halved the recipe and it still came out fine. Will try these in oven next time to make it healthier. May try beef in the next batch as well.

Chocolate Toffee Crunchies

These were fairly easy to make and taste like they could be from a fancy dessert shop. Warning, they are VERY RICH! I love toffee and buttery taste, but could only eat very small slivers of this at a time. Instead of pecans, I put heath bar bits over the top, YUMMY!!! Also lined pan with aluminum foil for easy cutting, removal, and clean up.

Brown Sugar Smokies

These appetizers are worth the effort! They are always a big hit when I make them for parties and events. I do use a broiler pan to keep the smokies from getting drowned in grease. Yummy crowd pleaser!!

Sausage Potato Casserole

Love this all in one breakfast/brunch dish!!! I first had it at a cafeteria and was soooo impressed with the taste that I hunted the internet soley based on what ingredients I could taste. This recipe was it!!!! Got the right one on the first try! Came out wonderfully. Next time I will try frozen hashbrowns for faster cooking. Thanks.

Baked Kale Chips

I was skeptical of such a dish, but lately had been hearing rave reviews online and on tv about kale chips. The only things I regret is that I added more season salt than was called for. Boy was that a mistake!!! As the kale dried, the season salt ended up clinging to the leaves A LOT!!! Lesson learned. Very good with spicy ranch that I had on hand.

Avocado Smoothie

Absolutely divine!! The avocado flavor is very light and I think other fruit/veggies could easily be added. The avocado provides an unbelievably smooth, creamy background for the flavors of the yogurt, mikl, and honey. Very filling as well. It reminded me of a milkshake!! So glad I found this recipe!

Oven Fried Chicken III

Great tasting alternative to fries chicken. Being a southern girl, I love my fired chicken but this is a wonderful option that is much healthier. My picky husband liked it very much. I also used Panko crumbs, which I think add more crunch and will use a cookie rack next time to keep underside of chicken from getting soggy!

Pizza Rolls

Made these for a snack and to try something new. I love pizza and the texture of egg roll wrappers when fried so trying this was a no brainer. They taste soooo good! Cheesy, crunchy and chewy rolled up in tomato goodness! A definite guilty treat! Everyone in the house cleaned the dish!

Hot Spinach and Artichoke Dip

This recipe was fast, easy, and an all around hit with the birthday crowd! People who said they didn't even like artichokes were eating the dip because they didn't know it was in the recipe. I just said spinach dip! I did not include bacon to cater to guest that don't eat pork. It was still great. Will surely be making this one again.

Pumpkin Wheat Honey Muffins

This was my first try at a homemade muffin and it was good! I was ecxited to try a whole wheat flour recipe and love the flavor of pumpkin. I substituted half of the oil with applesauce and replaced one of the eggs with egg substitute to cut the fat. The recipe was still great. Very moist crumbs! I think a light cream cheese glaze would be a great finishing touch if you want to splurge! I baked for about 20 mins.

Garlic-Roasted Chicken and Vegetables

A whole can of chicken broth is waaaay too much if you want the potatoes to get crisp. The meat was very moist, but I think in the future I will add more seasoning as the chicken was a little bland beyond the skin.

Kathy's Roast and Vegetables

This roast was well-seasoned, but more slightly more salty flavored than I prefer. This was my second attempt at pot roast and overall a success. Cooked on high with veggies and all in about 5 hrs! The searing definitely makes a difference in the flavor and moisture. I used beefy onion soup mix and think I will use regular onion mix next time. That may have been where the extra salt came from. I think I will also add fresh herbs too for more taste. Very tender!

Oven Barbecued Beef Brisket I

Great recipe. This was my first brisket cooked at home and it was very flavorful and tender. I followed the recipe as written except halved for a smaller portion. No fail results!! My picky husband loved it as well!

Pineapple Cream Cheese Pie

I halved this recipe to make just one pie. There was still way too much pineapple filling. In my opinion there should be more of the cream cheese layer. I think next time I'll do more of the cream cheese mix and blend it with the pineapple layer. I also used part splenda to make it healthier. My family liked it, but I can improve it.

Martha's Cornbread Dressing

This dressing was a complete success!! I had never made dressing before and loved to eat it. Being out of town this year for Thanksgiving, I decided it was time to try it own my own. This recipe is the same as one I was given from a great cook. Everything is the same, but I didn't use the chicken. I used chicken broth. I also used toasted white bread instead of biscuits. The dressing was very moist and full of taste. I was so proud of myself!!

Never Enough Green Bean Casserole

This recipe was soooo easy to make. And my picky boyfriend loved it. He has eaten many green bean casseroles, and says it's among the best. I adjusted the recipe for two people by eyeballing it and it still worked out just fine!!

Roast Sticky Chicken-Rotisserie Style

I revised this recipe to cook individual pieces of the whole chicken. I used the same herbs and spices, but modified (by eyeballing) to season each piece.I baked at about 350-375 for 30-45 mins depending on your oven. The chicken was very moist and flavorful and had the real rotisserie taste.
