Hot and Sour Chicken Soup

Very easy, yummy recipe! I used tofu instead of chicken and it was great. I also substituted rice vinegar for the red wine. This will become a favorite for me.

Maria's Paella

I made this yesterday with just a couple changes. I omitted the chicken and used fish broth rather than water. I would maybe use a mixture of fish and chicken broth next time for a little more flavor but this was overall a really yummy dish. Such an easy recipe once you have everything assembled. The combination of seafood was absolutely delish!

Sophie's Zucchini Bread

I love this recipe! I couldn't find my loaf pan (we just moved), so I made these into muffins. They were so good! I cooked them for about 25 minutes and they were perfect. The only other change I made was using a jar of pear/plum baby food as a substitute for half of the oil. Great recipe!

Fasoliyyeh Bi Z-Zayt (Syrian Green Beans with Olive Oil)

very yummy, my veggie-phobic husband ate them and declared them "very good"! I used a little less than a 1/4 cup of oil and used fresh green beans, since I'm not a big fan of frozen veggies. We ate them "warm", as many people suggested that they were better after sitting for a bit. This is a keeper.

Garlic Chicken with Orzo Noodles

Very easy and quick to prepare. I made minor changes, such as using thighs and added a bit more garlic and spinach. Really couldn't be simpler. Next time I may add some white wine when sauteeing the chicken. This dish was great the next day as lunch also.

Thai Ground Chicken Basil

Very yummy! I made minor changes to suit what i had on hand. I used ground turkey instead of chicken, I didn't have the thai peppers, so I used Lee Kum Kee Chili pepper sauce. I added some shredded cabbage as I was sauteeing the garlic...it was a great addition! We ate this in lettuce wraps.This would be great in potstickers also. Great base recipe! I would highly recommend!

Mostaccioli with Spinach and Feta

Great recipe, didn't want to give it a "5" since I tweaked a couple things. I used 4-5 cloves of garlic to really pump up the flavor. I also added chiken broth when I was sauteeing the tomatos and garlic, I didn't want the "sauce" to be too dry. It was great because the pasta was cooked al dente and absorbed all the yummy sauce when I combined it. I served it with some shredded romano on top. This will be going into my regular rotation.

Vietnamese Spring Rolls

these were good, I didn't make the hoisen sauce, maybe that was what this was missing. Avocado would be yummy in this as well. I thought it was a little plain but I don't think that was the fault of the recipe.

Spanish Rice Chicken II

I used boneless/skinless chicken thighs for this but otherwise followed the recipe exactly. Really easy to prepare, great weeknight dinner because of minimal prep. The taste was very yummy! I may try this in the crockpot next time. My family raved at how great this tasted!

Marbled Pumpkin Cheesecake

Really great, easy cheesecake. I made this last night for my husbands birthday and it was beautiful. The crust is amazing, worth the extra effort. I only had a 8 inch pan and it worked great. Next time I may use 3 cream cheeses just to get a taller cake. This is a keeper!

Apple Cream Coffee Cake

I made this x-mas eve to eat in the morning while opening presents...wow, it didn't disappoint! Very good flavor, moist, and the apples are a great addition. I followed the recipe exactly except that I didn't have a tube pan. I used a 9 inch cheesecake pan it it turned out great, a little hard to spread the batter and I didn't exactly have enought to do a complete 2nd layer but it didn't seem to matter. It all puffed up wonderfully. Oh, I did use brown sugar for the topping, delish!

Yakisoba Chicken

We love this recipe! The soba noodles are key I think. My husband who usually doesn't like asian flavored meals, thinks this is delish. I follow the recipe exactly and have made this several times now, I add more cabbage now as I think it is filling without adding calories.

Corn Dog Muffins

this is a bit low-brow but SO good! I cut the hot dogs up into slices and was happy with how they turned out. Absolutely yummy right out of the oven, my husband said they weren't as good the next day. These wood be perfect for a little kids party and could be modified using veggie or vegan hot dogs.

Angel Hair with Feta and Sun-Dried Tomatoes

I have to say I was a little worried that this wouldn't have much flavor but this was SO good! I used sundried tomatoes packed in oil, because thats what I had but I otherwise followed the recipe exactly. This is an excellent no meat dish. The cilantro was a great addition, I was pleasantly surprised. This will be going into my regualr rotation.

Broiled Tilapia Parmesan

this was really, really good! I followed the recipe exactly except that I used frozen tilapia from Costco. I cooked for 25 minutes at 400 degrees, then I added the topping and broiled for 5 minutes. I will be adding this to our rotation.

Stuffed Cabbage Rolls

Cabbage Fat-Burning Soup

I have made this recipe twice so far. The first time I followed the recipe exactly. I found the onion a bit over-powering and really didn't understand why it called for whole tomatoes, the flavor from the tomato juice was "ok" but not great in my opinion. The second time I made the following changes: Used 1 onion and sauteed it first before adding the other ingrediants, I used diced tomato and I omitted all the tomato juice and just used organic chicken broth. I preferred the second version by a landslide! I have been making this soup to lose weight in conjuction with using weight watchers. I have a bowl whenever I'm feeling really hungry or at the beginning of a meal, so that I cut down on how much I eat.

Greek Garbanzo Bean Salad

Loved this! The first time I made this I followed the recipe exactly except for omitting the black olives. The second time I made this I added chpped celery...it was great. This recipe holds up well in the fridge and is just a yummy refreshing salad to eat!
