Graham Cracker Crust

Reviewed: Aug. 16, 2009
Very Sweet- I used this crust for a key lime pie and it countered the tartness nicely, but for a sweet pie, I'd recommend less sugar. Measurement wise- one sleeve of graham crackers is perfect.

Raisin Rice Stuffed Chicken

This was great! Since we didn't have raisins, I subbed cherry flavored cranberries, and surprisingly- It was delicious! I was nervous about the cherry flavouring...

Potato Latkes I

Not sure what I did wrong, but these became very greasy throughout the cake... I probably won't be making again.

World's Best Lasagna

Reviewed: Oct. 15, 2007
Followed this recipe with the exception of using "Homemade Lasagna" direction for spices. It turned out pretty good, although I think we liked our version of "Homemade Lasagna" more. Still a worthy recipe though!

Caramel Apple Pork Chops

Served this for a friend on her birthday. Although she was less than excited about pork chops, she was surprised by this recipe! Great for Fall! (easy clean up too! one pan!)

Sandy's Chocolate Cake

Reviewed: Oct. 9, 2007
This was one of the better chocolate cake's I've made, however, we decided it needed something more to put it over the top. Hubby thought fudge would do the trick, while I think sliced strawberries would make it phenomenal. Very good though. FYI, I bought a 16oz sour cream so when I made the frosting I only had a little more than a third of a cup to use. It still tasted great and had a good consistancy. I also used two Hershey's Dark Chocolate bars for the semi'sweet chocolate.

Yummy Honey Chicken Kabobs

Reviewed: Oct. 8, 2007
I skip the kabobs and cook it on my stove top grill with onions just like the recipe. I normally don't marinate it the full time, sometimes only twenty minutes, but it's still great! Thanks!

Oven-Fried Pork Chops

Reviewed: Oct. 1, 2007
I omitted the milk, dipped it in flour prior to the egg, and used a breadcrumb, oregano, basil, garlic mix instead of the stuffing. I seared it in a cast iron skillet then placed it in the oven for about 10 minutes. (adj time for thickness; I had thin tenderloins.)

California Grilled Veggie Sandwich

Reviewed: Oct. 1, 2007
This was amazing! Only thing I did different was splash the veggies with balsamic vinegarette. We put them in foil and steamed them on my griddle.

Amazing Butternut Squash

Reviewed: Oct. 1, 2007
I did substitute yogurt for mayo, and didn't use half a cup of onions since I had a small squash. The consistancy was right, and it looked nice. We didn't gag, but it definately wasn't something I'd want to make again. The taste reminded me of a hashbrown casserole (onions, cheese, potatoes, sourcream) but with a twangy sweetness.

Grilled Peanut Chicken

Reviewed: Sep. 14, 2007
I served this with a variation of Dad's Pad Thai of this site. They went well together and we enjoyed it, but the chicken really didn't have a ton of flavor by itself. It cooked moist, but the flavor was just ok.

Sweet and Sour Pork III

Reviewed: Sep. 13, 2007
Worth the effort. Wasn't difficult to prepare, but required 3 pan's just to cook the dish. Not a big deal really for most, but with no dishwasher, they stack up quick. I was afraid my husband wouldn't like this; it had a very pungent vinegar smell while cooking but It turned out great!

Grilled Bruschetta Chicken

Reviewed: Sep. 11, 2007
This would also make a good sandwich! Can't wait to try it on pasta! Update: Had this on thin spaghetti with mozzerella cheese and a Parmesan, Romano, Asiago sprinkle mix. I made a light sauce with some of the bruschetta- I simmered it in white wine and olive oil. We garnished it with black olives and it was SO good!!

Slow Cooker Barbeque

Reviewed: Sep. 11, 2007
This was defintely good! We used KC's Masterpiece (2/3's of the bottle added at the beginning). I drained it probably an hour before serving then added sliced onion rings and about a third of a bottle of the bbq sauce. If you use a leaner cut you won't have to drain.

Ground Beef 'n' Biscuits

Reviewed: Aug. 15, 2007
I grew up eating something very much like this; my mom called it Hungry Jack Casserole. I used this recipe on here to figure out spices, but we made ours differently. I cooked beef, bell peppers and onions in an iron skillet. Drained the skillet and added oregano, chili powder, brown sugar, garlic powder, salt & pepper. I let this simmer before adding a family size can of Bush's Original Baked Beans. Once this was heated I added a Mexican blend of cheeses (Monterey Jack plus some others). The secret to making this recipe look as great as it tastes is in the biscuits. Instead of plopping them flat over the entire casserole, slice them in half and set them on the edges, cut side down, then sprinkle with a little more cheese. This was my absolute favorite dish growing up.

Caribbean Pork and Couscous Salad

Reviewed: Jul. 12, 2007
My husband and I were torn on this meal. The couscous salad was amazing, however the pork was very spicy. If I made this again I would definately use less rub and add at least 2 T of brown sugar. I did variate on the recipe: I marinated it for a couple hours in olive oil and the "rub", then tossed it in the spices before cooking. Upon tasting it we actually rinsed the pork off to make it less bitter, then dipped it in brown sugar as we ate.

Almond Chicken Stir-Fry

Reviewed: Feb. 25, 2007
Hubby loved this! I used a "deluxe" stir-fry package and used a small can of mandarin oranges and a small can of pineapple chunks. I cheated and didn't reduce my soy sauce, but it still turned out great!
