Pork Chops and Sweet Potatoes for Two

Cooking For Two

Most of my cooking these days is just for my husband and myself. Frequently the recipes I use are for 4 or 6 servings. Then we have easy to reheat meals for after working all day. Sometimes this leads to bad refrigerator management and the leftovers turn into science projects. I'm trying to do some 2 serving only recipes and I'll share the best I find.
Pork Chops and Sweet Potatoes for 2

2, 4 oz. boneless pork chops
1 teaspoon canola oil
salt and pepper to taste
2 small sweet potatoes
1/2 cup orange juice
1/2 cup dry sherry

Heat heavy 10 inch nonstick skillet over medium-high heat for 2 minutes. Brush both sides of pork chops with oil and sprinkle with salt and pepper. Brown chops in skillet approximately 3 minutes a side.

Peel sweet potatoes. Cut into 1/4 inch slices

Remove chops from skillet and keep warm. Reduce heat to medium and add orange juice and sherry. Add sweet potatoes in a single layer. Lay pork chops over sweet potatoes. Cover skillet and cook for 15 to 20 minutes, or until sweet potatoes are tender and there is no trace of pink in center of chops when tested with sharp knife.

Remove chops and sweet potatoes to warm serving plate. Heat liquid in pan, uncovered, until thickened to your liking. Spoon glaze over chops and sweet potatoes for service.

The salsa is actually PACE PICANTE SAUCE, Med. or Hot. The chili seasoning Williams Original (not available in all areas), I use one package per 2 lbs of ground beef... sometimes I throw in a little extra from another package. Used crushed tomatoes instead of tomato sauce, and I used more than the recipe called for. I also increased the meat a little and threw in a can of pinto beans in addition to the light and dark kidney beans, and I added a little cayenne pepper to spice it up a little more.

Trying to make sweet and sour shrimp with deep fried shrimp. Coating came off the shrimp when I put the sauce on. My familiy refused to eat it. We were short of money then and it hurt to waste the food and then go get MacDonald's for dinner.
