Pork Chops and Sweet Potatoes for Two

Cooking For Two
Most of my cooking these days is just for my husband and myself. Frequently the recipes I use are for 4 or 6 servings. Then we have easy to reheat meals for after working all day. Sometimes this leads to bad refrigerator management and the leftovers turn into
science projects. I'm trying to do some 2 serving only recipes and I'll share the best I find.
Pork Chops and Sweet Potatoes for 2
2, 4 oz. boneless pork chops
1 teaspoon canola oil
salt and pepper to taste
2 small sweet potatoes
1/2 cup orange juice
1/2 cup dry sherry
Heat heavy 10 inch nonstick skillet over medium-high heat for 2 minutes. Brush both sides of pork chops with oil and sprinkle with salt and pepper. Brown chops in skillet approximately 3 minutes a side.
Peel sweet potatoes. Cut into 1/4 inch slices
Remove chops from skillet and keep warm. Reduce heat to medium and add orange juice and sherry. Add sweet potatoes in a single layer. Lay pork chops over sweet potatoes. Cover skillet and cook for 15 to 20 minutes, or until
sweet potatoes are tender and there is no trace of pink in center of chops when tested with sharp knife.
Remove chops and sweet potatoes to warm serving plate. Heat liquid in pan, uncovered, until thickened to your liking. Spoon glaze over chops and sweet potatoes for service.
