Simple Squash Dish

I had an 8 week organic farm share and need to use up the butternut squash I have left.
To precook the squash I try to get small ones where the neck of the squash is about 3 to 4 inches thick. I cut the neck just above the bulb. Then I cut the neck in half length wise. Be sure to use a heavy chefs knife and use caution as the these aren't call hard squash for nothing. I cut the bulb in half and scoop out the seeds. I peel all the pieces and place them cut side down in a greased baking sheet. I bake them at 350 degrees for 45 minutes.

This gets even better when reheated the next day.

Butternut Squash and Apples

1, 3 lb. butternut squash, baked and sliced into 1/2 inch slices
2 large granny smith apples, peeled, cored and sliced
2 teaspoons pumpkin pie spice or 1 teaspoon cinnamon with 1/2 teaspoon each of cloves and nutmeg

Spray 9X13 baking dish with vegetable oild cooking spray. Make two layers of squash topped with apples. Sprinkle with spices. Cover with foil and bake at 350 degrees for 30 to 40 minutes or until apples are cooked. Serves 8.
Alternate cooking method. Cook in pressure cooker starting with raw peeled squash slices and apple slices for the time your cooker's instruction book says for butternut squash.
 
I received a pressure cooker as a Christmas gift. I haven't had one for over 10 years so need to get back in the groove of using it regularly. So, watch this blog for pressure cooking ideas. I love it for soup, risotto and fast meat, potato and veg all in one dishess.

Trying to make sweet and sour shrimp with deep fried shrimp. Coating came off the shrimp when I put the sauce on. My familiy refused to eat it. We were short of money then and it hurt to waste the food and then go get MacDonald's for dinner.
