Little time to cook

I'm having a busy summer. I'm working 10 days every two weeks instead of my usual 9. I'm also taking a food saftey and sanitation class on my Thursdays off this month. I had an Illinois food safetly liscence 10 years ago and I let it lapse. When this adult
ed. class fell naturally on my days off I felt it was a sign I should get another one. I have today off from work today and tomorrow and that's it until August first.
It's weeks like this that I am glad the local grocery stores offer cooked rotisserie chicken. I make a big tossed salad before I leave for work. Chicken and salad for dinner is perfect for these two middle aged people. I picked up a prepare turkey meatloaf
last Friday and that leaves us plenty of lefovers for lunches and dinners for a couple of days.
Today I'm preparing a pork roast. I'm not sure if I have a enough gas left for the grill to cook it through. I don't feel like spending part of my precious time off trading my low tank for a full one. I'm just going to start it on the grill to get it browned
with my husband's special rub to season it. Then I'll finish it in the crock pot with bourbon barbecue sauce I got on allrecipes.com.
I'm going to serve an oil and vinegar cole slaw and tossed green salad with it.
