Enjoy the fruits of summer

Fresh raspberries have been particularly delicious this year. This salad makes  a cool and refreshing first course and shows off the berries.
Cool Summer Salad

3 cups seedless watermelon cubes
1 cup cucumber slices*
2 cups fresh raspberries
1 tablespoon honey
1/4 cup minced fresh mint leaves
1 tablespoon lime juice
1 teaspoon grated lime peel

Combine watermelon, cucumber slices and raspberries in a bowl then divide evenly between 4 fruit cup type bowls or salad plates. Place honey in a small custard cup and microwave on high for 10 seconds. With a fork, whisk mint, lime juice and lime peel with the honey. Drizzle honey mixture even over the 4 servings. Serve immediately.

*Peel cucumber, cut in half lengthwise and scoop out seeds. Slice each half in 1/4 inch slices.

I love to develop new recipes. I have had 15 recipes published by Reiman publications, publishers of TASTE OF HOME magazine. I like to try at least one new recipe a week. My other interests that aren't listed above are running and horse racing. By profession I am a registered medical technologist currently working in microbiology at a local medical center.

My cooking triumphs
Winning a runner up prize for my lasagne recipe when I worked for the Nestle corporation. (I was a part time R&D assistant for the Willy Wonka Candy Factory)
My cooking tragedies
Trying to make sweet and sour shrimp with deep fried shrimp. Coating came off the shrimp when I put the sauce on. My familiy refused to eat it. We were short of money then and it hurt to waste the food and then go get MacDonald's for dinner.
