Simple and Hearty Chicken Soup

Chicken Barley Soup
1 tablespoon olive oil
1/2 cup diced onion or white part of a leek
1/2 cup diced red bell pepper
1/2 cup thinly sliced celery
3/4 pound boneless chicken breast or thighs (or combination of both) cut into 1 inch cubes
32 oz. reduced sodium chicken broth
1/3 cup pearled barley
2 teaspoons dried Italian herb mix OR 2 teaspoons dried bouquet garni herb mix
In a 4 quart pot, heat oil over medium high heat. Saute onion, bell pepper and celery until onion is clear, about 3 minutes. Add chicken cubes and brown on all sides, about 5 minutes. Add broth, barley and herbs. Bring to a boil, cover, reduce heat to low simmer.
Simmer covered for 40 minutes or until barley is tender.
Serves 6 to 8.
