Went to Aldi's last Friday and got stocked up on all my baking pantry needs. This recipe is a great small batch of cookie jar cookies.

Carrot Cookies

1 cup softened butter or stick margarine
3/4 cup sugar
1 beaten egg
1 1/2 cup shredded raw carrots
1/2 teaspoon grate orange peel
1/2 teaspoon vanilla
1 1/2 cups white flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt

Cream butter and sugar together. Mix in egg, carrots, orange peel and vanilla. Sift together flours, baking powder abd salt. Blend into wet ingredients. Drop by teaspoonfuls onto greased cookie sheets. Bake at 375F for 10 minutes. Remove to wire rack or brown paper sacking to cool. Yields 3 dozen.

Winning a runner up prize for my lasagne recipe when I worked for the Nestle corporation. (I was a part time R&D assistant for the Willy Wonka Candy Factory)
My cooking tragedies
Trying to make sweet and sour shrimp with deep fried shrimp. Coating came off the shrimp when I put the sauce on. My familiy refused to eat it. We were short of money then and it hurt to waste the food and then go get MacDonald's for dinner.
