I rarely use convenience products. However, I am currently fascinated by all the recipes using a box cake mix as a base. I buy the mixes when a store features them at $1 a piece or less. I needed to make something to take to a meeting at church Monday night. I'm really low on baking ingredients as I don't bake a lot in the summer. Had all the ingredients for this recipe so made it this afternoon. I guess it comes out more like a loaf cake than quick bread. Added the nutmeg the second time I made this recipe as it enhances the banana flavor which is a little dwarfed by the cake mix flavor.

1, 18 1/4 oz. yellow cake mix
1 egg
1/2 cup milk
1 cup mashed bananas, about 2 medium
1/2 teaspoon ground nutmeg

In a large mixing bowl, combine cake mix, egg and milk. Stir in banana. Beat on medium speed ( hand held mixer works fine) for 2 minutes. Transfer to two, 8X4 inch greased loaf pans. Bake at 350 degrees F for 40 to 45 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes in pans before removing to wire racks to cool completely. Yields 2 loaves, 12 slices each for about 100 calories a slice.

You're right, this does look quick and easy! I have used yellow cake mix as a base for several family faves, but not this simple! 9Well, except YCM "dumped" on a can of crushed pinapple mixed with a can of pie cherries, with a cube of butter splintered over the top, 350 for about an hour...)Thanks!

I tried a recipe with a box mix this summer for the first time; I have to admit...it was wonderful. It saved so much time...and the texture of the end product was perfect. I will definitely do try it again.

Trying to make sweet and sour shrimp with deep fried shrimp. Coating came off the shrimp when I put the sauce on. My familiy refused to eat it. We were short of money then and it hurt to waste the food and then go get MacDonald's for dinner.
