Stir Fried Green Beans and Walnuts
lb. fresh green beans, trimmed and cut in half on diagonal
1 tablespoon peanut or vegetable oil
1 tablespoon grated fresh ginger
1 clove garlic, minced
1/4 cup dry sherry, white wine, chicken broth OR water
1/2 cup chopped walnuts
Heat oil in wok or deep heavy skillet over medium high heat. Stir fry ginger and garlic for 30 seconds. Toss in beans and stir fry for 2 to 3 minutes until they are bright green and just
tender crisp. Sprinkle with sherry, cover and steam 1 minute. Toss with walnuts and serve immediately. Serves 6.
Ok, I'll admit I posted this recipe because I had a picture I took of green beans. Don't have a big library of photos yet. Will take some time now that I've learned to use the digital camera. Stir frying
seasonal fresh vegetables is a favorite method of preparation. Stir fried vegetables don't have to have Asian style seasonings. Omit the ginger at the beginning and add minced fresh herbs at the end and you have whole different dish.
