"Thai Style" Chicken and Rice

Wednesday's recipe is for a Thai inspired chicken, vegetables and rice. I like cooking with whole grain rice. I find it has more flavor and of course more texture than white rice. It's longer cooking time enables me to put the rest of the meal together.
I ended up making this a little spicier by adding a teaspoon of mixed spices I got at the store called Thai Seasoning. It was mainly hot peppers. My husband wanted it to have a kick. He still used hot sauce on it. There are only two of us at home now so we
have some left overs. This has the rice mixed in chicken and vegetables instead of having them served over rice. I find this kind of dish is even better the next day.
