Veggie Breakfast Casserole
1 cup diced bell pepper
1 cup diced, seeded fresh tomato
1/2 cup diced onion
2 slices provolone cheese, torn into small pieces
1/3 cup grated parmeson cheese
2 tablespoon snipped fresh chives or 1 tablespoon dried
1/4 cup minced fresh parsley or 2 tablespoons dried

This yeast bread fixes up in a snap. It also slices well and freezes well. It is especially good for toast in the morning. Make it first for hot bread with dinner and keep the rest in the refrigerator or freezer for future meals.

I'm featuring an over the top recipe for some mondo scrambled eggs on my website. Serves 1 dad and teenage son or 6 regular people. Doesn't have quite as many ingredients as when dad makes them himself.
