The weather is finally getting warmer in my area of the country. I continue to use my slow cooker through the summer to keep my kitchen cooler and still have a satisfying dinner.

This is the Mother's day menu my husband prepared for his mother and me last night.
Cold Cucumber Soup
2 lb. cucumber, peeled and seeded
1/3 cup diced yellow onion
1 cup low fat butter milk
1/2 cup plain fat free yogurt
pinch of coarse salt and dash of ground white pepper

Roast Beef Hash
2 cups peeled potatoes cut into 1/2 inch cubes
1 tablespoon butter or margarine
1/2 cup each: diced celery, carrot and onion
