Pork Chalupas
This recipe is awesome! The only thing I did differently was use vegetable broth instead of water. I only had one can of chiles also, but it was enough for us. I served it on the tortillas as suggested with a side of green beans and spanish rice. YUMMY! It did make a ton and I froze the leftovers. I will make this again and again. Thanks for sharing!

Heavenly Potatoes and Ham
This recipe is yummy! It is a great way to use up leftover ham. I made a few adjustments based on other reviews. I used leftover honey baked spiral ham cut into pieces and doubled the amount. I used cream of celery soup, added garlic powder and parsley. I only used about 3 pounds of potatoes...5 would have been way too many. I did not have enough sour cream so I made up the difference with cream cheese. It was about 50/50. I omitted the salt and am glad I did. I also added about a cup of milk to make the mixture a little smoother. I put everything together except the potatoes which I only cooked until slightly soft. I then mixed those in. Everyone loved it. We ate it as a main dish with broccoli on the side. Delicious! I will definitely make again...maybe next time with chicken.

Easy Shepherd's Pie with Garlic Romano Potatoes
YUMMY! I omitted the diced tomatoes since I do not care for them, used frozen mixed veggies instead of canned, and used two packages of "Simply Potatoes" mashed potatoes instead of making them from scratch. I also added shredded mozzerella to the potato mixture before baking and it was awesome! My husband does not like veggies and he had seconds. I will definitely make again.
