About this Cook
I have learned so much from my husband, and along the way have found that I also truly enjoy cooking! And a lot of that is thanks to this website! It makes it so much easier, and more fun!
My favorite things to cook
I LOVE to do recipe makeovers on traditional recipes, or just a typical full-of-fat, not-so-healthy recipe. My husband is the guinea pig to see if I pull it off or not. So far, I would say I'm batting about .900!!!
My favorite family cooking traditions
Casseroles, fried chicken, steak & potatoes (true Midwestern-er!).
My cooking triumphs
Well, they aren't extremely healthy, but I get a lot of requests for my bierocks (aka Runzas). It's not that "I" make them super special, it's just that I'm the one who will actually take four hours to make them! :-)
My cooking tragedies
Which one... once I had a recipe that required boiling chicken for 30 minutes or so so that it could be shredded. Well, I lived by myself & decided I had time to run to the gym for a quick workout (it was a small town). Well, needless to say when I got home from working out you could see the smoke from about 2 blocks away!!!

Orange Roughy Parmesan
I LOVE THIS RECIPE!!! I had been using the Broiled Tilapia Parmesan recipe from this website because of the high ratings, but this is SOOO much tastier, easier, and lessy messy! It is perfect for any light fish. Thank you so much - a staple in our home!!!!

Denise's Peanut Chicken
This is AWESOME! I did as many reviewers mentioned and used chunky peanut butter. I also increased the garlic and used chili garlic sauce. While it was simmering, I squeezed some fresh lime juice. It was PERFECT! Thanks so much!

Quick and Easy Chicken Noodle Soup
Awesome recipe! I did like ChicagoRN2 (I think!) mentioned, and I tripled the veggies, used a rotisserie chicken from the store and it was delicious! I also did as others mentioned and sauteed the veggies before putting them into the soup. I also kept the noodles separate so we can freeze the soup. This soup was delicious, and tasted like I spent all day slaving! Thanks so much!
