Pesto Scrambled Eggs

I used some leftover feta cheese and was delighted at the flavorful result. Others have mentioned variations they've done, and I can see this recipe as a jumping off place for a lot of combinations. The pesto is the key, and if you really like pesto you could add even more.

Libby's® Famous Pumpkin Pie

This has been my only pumpkin pie recipe for over 30 years. I've never even wanted to try another because this is SO good. When the pie comes out of the oven I dust the top with cinnamon and that gives it a nice appearance. Otherwise, make it just as it is; it's wonderful!

Chocolate Cobbler

Oh my goodness, this is fantastic! There is some debate in the reviews about whether there is too much water in the recipe, but I found the amount of gooey stuff to be just right. It's a perfect chocolate fix when the pickings in the pantry are slim. We didn't have ice cream to serve with it, but who cares? It's wonderful as is.

Cranberry Orange Loaf

Absolutely delicious and a perfect combination of sweetness and tart with the orange and cranberry flavors. I did halve the cranberries and toss with some sugar, as suggested by others. A definite make again recipe.

Pork Tenderloin with Creamy Herb Sauce

This is one of the best recipes I've ever tried from AR, and at this point I've eaten over 300 of them! It's a company-worthy dish that is very easy to prepare. I planned to make it exactly as written, but in the middle of preparation I discovered I had no basil (HOW did that happen???) and I substituted Italian Seasoning. I liked the result so well I will probably go that route in the future. I served it over penne, and next time I would definitely double the sauce. This is outstanding, and I highly recommend it.

Irish Potato Candy

These are so cute! I surrounded a plate of Irish Soda Bread with them. I had to explain what they were, since they do look a little odd, but once the group knew what they were they dove right in until they were gone. The taste is different and good, and they are a great touch for St. Patrick's Day. I would recommend chilling the mixture for about five minutes before forming the potatoes, then chilling them again for a few minutes before rolling them in the cinnamon. They keep their irregular potato shape better that way.

Black Magic Cake

This is without a doubt one of the best chocolate cakes I've ever made or eaten. It's dark, moist, and delicious. I highly recommend it, and I expect I will be making it often in the future.

Bertha's Blueberry Dumplings

We went out early this morning to pick blueberries, and when we got home we both wanted something made with blueberries NOW. I whipped this up quickly, and in no time we had a delicious, satisfying blueberry fix, even without an ice cream topping. I can't wait to dive into the leftovers. Shortening worked fine instead of lard.

Balsamic Cream Sauce

This is a delicious sauce! I doubled the sauce, sautéed some cubed chicken breast and added it to the sauce, and served it over penne. Made me want to lick the plate!

Black Bean and Couscous Salad

I made this for a church picnic and thought it was great. I love the unusual combination of the lime juice and cumin. Some reviewers suggested using other beans, so I used one can of black beans and one of pinto beans, mainly to give the salad even more color. It's not only easy and delicious, it's very colorful and pretty to look at as well. I'm sure I'll make it again.

Parmesan Sage Pork Chops

Tasted great and were nice and tender. I didn't have a lemon so I used True Lemon, and my chops exceeded the recommended temperature in less than 10 minutes. Otherwise I followed the instructions exactly and was very pleased with the result. Very good breading.

Triple the Ginger Cookies

I didn't think these were any more trouble than most cookies, and less than some. The results were excellent. I love the extra burst of ginger you get when you bite into a chunk of fresh or crystalized ginger. I rolled mine in granulated sugar before baking them to give them a little more fancy appearance.

Cajun Pasta Fresca

Delicious! One of the best things I've made in a while. I used regular tomatoes because I wanted to make sure there was enough juice. In a pinch, you could easily use canned diced tomatoes. It's a definite make-again.

Caramel Shortbread Squares

Oh so good! I had no trouble cutting them, nor did the layers separate as others have said. I did take another reviewer's advice to line the pan with foil for easy liftout and cutting. I wish I had doubled the recipe, both because I like them and they're going fast, but also because I'm not sure to do with the rest of the can of condensed milk. I'm thinking about trying them with just the caramel and chocolate layers for a quick and easy approximation of chocolate covered caramels.

A big hit at the pot luck I took it to. There's such a great combination of flavors in this--the sweet/salty that others have mentioned, but also the tang from the cream cheese and the slightly browned butter taste as well. A definite winner!

Torrejon Oatmeal Bread

If you like a dense bread, as I do, this is excellent. If you're looking for a light, fluffy bread, you need to select another recipe. This has a somewhat chewy texture, and is good toasted or untoasted. I might cut down a bit on the sugar next time, but it's good as is. My dough did not require the full amount of flour stated in the recipe to make the dough not sticky.

Jamaican Beef Patties

I was hungry for curry and looking for a recipe that didn't require the apple or coconut milk I didn't have, and I decided to try these. I'm so glad I did! They're really good, and not that difficult to make. Since some other reviewers complained about dryness, I just eyeballed the amount of broth and bread crumbs until it seemed like the meat mixture was moist enough. I was concerned that the pastries might stick to the baking sheet since it didn't say to grease it, but they did not. I loved the flakiness of the pastry and the curry in it, and I would not advise substituting store bought pie crust for it as others have suggested. I also found the pastry to be easy to handle. I halved the recipe because there are only two of us, and I wish I hadn't.
