Chicken Pot Pie VIII

This is really delicious! The filling is full of flavor and the crust is nice and flaky. However, you MUST partially cook the vegetables before assembling the pie, and it's a good idea to cut the pieces small. My pie baked for 40 minutes, I'd pre-cooked the vegetables, and there was still a bit of crunch to them. Since some reviewers mentioned there's a lot of filling, I used a deep dish pie plate. It was something of a struggle to get the dough to fit it but I managed. I still had extra filling left. Be prepared to spend a LOT of time making this, with chopping the vegetables, preparing the chicken and making and rolling the pie crust. Therefore it's not something I would make regularly, but only when I had plenty of time to do it. I didn't use mushrooms and used peas instead. Really good cold weather dish--try it!

Buffalo Chicken Dip

My son-in-law loves wings, and I wasn't about to mess with them, so I made this instead. He absolutely loved it and took the leftovers home. The rest of us enjoyed it as well, and I like the fact that you can get the wings taste without the fuss. I did some chicken breasts in the slow cooker so the chicken was tender and easy to shred. I think this would be good with some blue cheese instead of the cheddar.

Luscious Buttercream Frosting

This makes a very nice icing--smooth, creamy and tasty. It also makes a generous amount. Be sure to add the milk gradually, stopping when it reaches the right consistency. I found it did not require the full 1/4 cup.

Brown Sugar Pound Cake I

I made this for a bake sale, and let me tell you, it was a real act of charity to give it away. The batter and crumbs were delicious and I only wish I could have had a big piece. It smelled wonderful when baking. I used Caramel Frosting I on it. 10/20/08--I wanted to try this cake so badly that I bought it back at the bake sale! It's very good, has the brown sugar taste, the right pound cake consistency, and is very moist.

Frosted Nutmeg Logs

I first made these at least 30 years ago. They take some time to make because of forming the logs and frosting them, but they're really delicious. Sprinkle some nutmeg on the frosting while it's still wet for a really festive look. You might try some real rum in the frosting too instead of the flavoring.

Chocolate Cobbler

Oh my goodness, this is fantastic! There is some debate in the reviews about whether there is too much water in the recipe, but I found the amount of gooey stuff to be just right. It's a perfect chocolate fix when the pickings in the pantry are slim. We didn't have ice cream to serve with it, but who cares? It's wonderful as is.

Rich Chocolate Frosting

The name says it all! This is a delicious, rich chocolate frosting that's easy to make and tastes wonderful. My only recommendation is to make sure to sift the sugar and cocoa first so you don't have any lumps. It's so good you just want to forget the cake and eat the frosting!

Strawberry Spinach Salad II

This is a fantastic salad as well as a beautiful one. I made it as written except I didn't have any sesame seeds. The blend of tastes and textures is wonderful. By adding other things such as chicken, nuts or cheese it can be made into an entree salad. Great stuff, and I can't wait to serve it to guests.

Slow Cooked Corned Beef for Sandwiches

This was the first time I ever made corned beef. The flavor was great and the meat was very tender. I only made one brisket because there were only two of us, and I got a lot of mileage out of it. The first night I made potatoes, cabbage and carrots in the broth and served it with the hot corned beef. I wasn't crazy about the vegetables done this way. The next night I made corned beef hash with poached eggs on top and it was excellent. Finally, we finished up with sandwiches of corned beef, cole slaw and Russian dressing on rye. I did them panini style and they were SO good. I'm getting hungry for them again as I write this.

Delicious Rosemary Bread

The name says it all--it is delicious. My dough didn't take nearly 3 c. of flour. I had used my last egg earlier in the day, so I had to skip the egg wash, but nevertheless it became two beautiful loaves of bread with excellent flavor.

Cranberry Sweet Potato Bread

Caribbean Holiday Shrimp

This was the first time I used fresh cilantro and I discovered I'm one of those who don't care for it. Since that's a problem with my taste and not the recipe, I'm still giving it 5 stars because other than the cilantro, it was excellent. Lots of flavor, a little zip, and it's a very pleasant summer dish. I served it on a bed of baby greens.

Judy's Strawberry Pretzel Salad

A big hit at the pot luck I took it to. There's such a great combination of flavors in this--the sweet/salty that others have mentioned, but also the tang from the cream cheese and the slightly browned butter taste as well. A definite winner!

Russian Tea Cakes III

I've made these every year for Christmas ever since I was a teenager. They are so delicious and look beautiful on a cookie tray. My suggestions are that you will need more powdered sugar than stated. Put a few of the hot cookies at a time into a paper bag with the sugar in, shake gently to coat, remove and set aside on a rack to cool. The first coating with sugar will get soft from the heat, then when they are completely cooled, coat again and the sugar will adhere to the first coating making the outside nice and white.

Jamaican Beef Patties

I was hungry for curry and looking for a recipe that didn't require the apple or coconut milk I didn't have, and I decided to try these. I'm so glad I did! They're really good, and not that difficult to make. Since some other reviewers complained about dryness, I just eyeballed the amount of broth and bread crumbs until it seemed like the meat mixture was moist enough. I was concerned that the pastries might stick to the baking sheet since it didn't say to grease it, but they did not. I loved the flakiness of the pastry and the curry in it, and I would not advise substituting store bought pie crust for it as others have suggested. I also found the pastry to be easy to handle. I halved the recipe because there are only two of us, and I wish I hadn't.

Caramel Shortbread Squares

Oh so good! I had no trouble cutting them, nor did the layers separate as others have said. I did take another reviewer's advice to line the pan with foil for easy liftout and cutting. I wish I had doubled the recipe, both because I like them and they're going fast, but also because I'm not sure to do with the rest of the can of condensed milk. I'm thinking about trying them with just the caramel and chocolate layers for a quick and easy approximation of chocolate covered caramels.

Bertha's Blueberry Dumplings

We went out early this morning to pick blueberries, and when we got home we both wanted something made with blueberries NOW. I whipped this up quickly, and in no time we had a delicious, satisfying blueberry fix, even without an ice cream topping. I can't wait to dive into the leftovers. Shortening worked fine instead of lard.

Cream Cheese Squares

I was amazed at how good these were. We had to try them before they were completely cool, and then we had some more later. We preferred them at room temperature--but don't get me wrong, they were good warm too, although a good bit runnier. I would make these again.
