Ginger Pear Crisp

I've made this twice in the last five days. The first time was for a funeral at church, so I tripled the recipe, and the second time was for dessert for our Bible Study group. The first time I processed the ginger snaps finely and used almonds in the topping. I didn't think the top was crispy enough, so today I left some chunks in the ginger snaps and I used oatmeal instead of the almonds. I preferred that topping. Since there is a good bit of juice that accumulates in the bottom of the bowl of chopped pears, I drain off as much as possible, but both times I put some extra corn starch in the sauce to make sure it thickens enough. I found it baked up perfectly that way. I also added a little more ground ginger to the sauce to give it a little more kick. I thought this was delicious, as did everyone else who tried it. This may be my new favorite fall recipe.

Berdean's Cube Steak

I've never made cube steaks before, and I have to say I thought they had a weird texture. Other than that, which is not the fault of the recipe, it was a fairly good dish. I did saute some onion in the oil after browning the steaks. I also drained off as much oil as I could before adding the water. The steaks were fork-tender, and the gravy was good on mashed potatoes.

Beef and Bow Ties Pasta

For a basic recipe, I was surprised at how delicious this was. It seemed to be much lighter than the typical pasta dish since there is no heavy sauce, only the moisture from the tomatoes. I can see making this many times in the future.

Broccoli Tomato Cups

I cut the recipe back to 4. I aded a little shredded cheddar cheese to the broccoli, and used Italian bread crumbs, and a little more than it called for. I thought they were delicious, and would make an unusual side dish for company.

Easy Zucchini Parmesan

Has anyone besides me noticed there's no Parmesan in this? I added about 1/2 cup on top. While I was sauteeing the onion, I drained the zucchini in a collander, and then I pressed it with several thicknesses of paper towels. No excess moisture problem. While it's not the prettiest dish, it certainly tasted really good, and I'll definitely make it again.

French Toast and Spam Sandwiches

We like Spam once in a while, and I decided to try this. It's got the sweet/salty combo that's good, but overall I thought it was heavy. Dipped the sandwich in some pancake syrup as I ate it.

Summer Fruit Galettes

I only made one of these, and I used mostly peaches, with a few blueberries in the center. Since my peaches were very ripe and juicy, I added a little extra flour for more thickening power. I took another reviewer's advice and brushed the crust with egg yolk before sprinkling on the turbinado sugar. Not only did this help the sugar stick, it made a nice golden crust. This was a wonderful dessert with a real "Wow" factor, and our guest said it looked like something that would be served in a restaurant. I'm happy to have discovered a recipe for something that's so easy to make but impressive at the same time.

Broccoli with Almonds

I usually just serve my vegetables plain, but I made this as a side for company, and everyone loved it. I especially liked the crunch of the almonds. The chicken and onion flavors were subtle and didn't overpower the broccoli.

Four Cheese Margherita Pizza

I've made this twice in a little over a week, and loved it both times. Once I used my own dough, and once a pre-made crust. It was somewhat better with my own dough--no surprise there. I didn't use fontina. This is easy to make, and such a fresh, juicy, cheesy, delicious pizza! I think it's going to become a staple in our house.

Yummy Blueberry Cobbler

Really delicious cobbler! Based on other reviews, I used about 4 cups of blueberries, sprinkled about a tablespoon of cornstarch over the blueberries, and slightly reduced the amount of sugar in both places where it calls for it. Both the blueberry layer and the topping were delicious, and topped with a little vanilla ice cream it makes a wonderful down home dessert.

Stuffed Zucchini with Chicken Sausage

Since many reviewers said there was a lot of stuffing for two zucchini, I made this with three. The amount of stuffing was generous, but that's the way I wanted it. I have to say that for a largely vegetable meal this was really good. There is a lot of flavor packed into the stuffing. We had this just with a multi-grain loaf and it was a satisfying meal for two, with a little left over. I did make one other change and used a diced fresh tomato instead of canned, and I had to bake the zucchini for a good 10-15 minutes longer than stated. I wanted to make sure the zucchini was crisp-tender, not just crisp.

Quick Chinese Chicken Salad

Absolutely delicious! I used shredded rotisserie chicken, and low-sodium soy sauce, and omitted the cilantro. I also added some mandarin oranges and topped it with some toasted slivered almonds. As the name says, it's quick, and it's oh so good!

Braised Pork Chops

Very easy and very delicious. I did follow other reviewers' recommendations to cook in broth and use water/cornstarch mix. I had boneless thin-cut pork chops, and adjusted the time accordingly. Enjoyed the gravy over rice.

New Orleans Corn Bisque with Smoked Sausage

Because many reviewers thought this was bland, I added about a teaspoon of Cajun seasoning, and 1/4 tsp. of smoked paprika to enhance the smoky flavor of the sausage. We thought it was a very good soup that way.

Chesapeake Bay Pork Chops

Weak on the Old Bay flavor, and very strong on the vinegar. On the plus side, they were tender. Other than that, not much to recommend them, unless you're very fond of vinegar.

Italian Chicken and Chickpeas

This is a very good dish that's easy to make. The only change I made was to omit the cayenne, and for our tastes it was hot enough with just the red pepper flakes. Oh, and I did use fresh rosemary, which I believe enhanced the rosemary flavor I love. We had a little left over spaghetti (without sauce) that my husband served his over. The dish has lots of flavor and is different from the usual chicken in tomato/spaghetti sauce.

Fluffy French Toast

I wanted to try this recipe to see if the flour made the French Toast more crisp. Truthfully, since I was making a smaller amount, I just estimated the amount of ingredients. In any event, both my husband, who is our usual French Toast maker, and I thought this was a good recipe. The toast was definitely more crisp than when my husband makes it, but it may be because I had more patience and fried it longer. It was a good Sunday morning treat.

Cranberry Squares

So delicious, and so easy to make! I used butter, and love the rich flavor of it, blended with the sweet/tart flavor of cranberries. I used whole cranberry sauce, and a little more of it, in order to evenly coat the crust. I'm wondering if making half again as much of the dough, and making the bottom crust a little thicker, might not be a good idea.

Pork Normandy

Loved this. The sauce was sweet, but not too sweet. It had a good apple flavor, with an undertone of onion. I used Hornsby's hard cider in Crisp Apple flavor. I found that some hard ciders seem to have more of an apple flavor than others, so go for the more apple ones. The sauce was excellent over noodles. The pork was extremely tender, and the sauce complemented it perfectly. It was a really nice autumn dish.
