Marinated Cheese

I made this twice, and both times it didn't generate any comments from those who tried it. I thought it was reasonably good, but apparently it didn't impress others. It seemed a little vinegary, but otherwise it had a good taste. I substituted Monterey Jack for the cream cheese based on the comments from others about the difficulty of cutting the cream cheese. I also just put the pieces randomly into my serving dish rather than trying to arrange them. It makes a pretty presentation, and it's certainly easy enough to make.

Tortellini Bacon Broccoli Salad

I made this for my granddaughter's First Communion lunch and everyone seemed to really like it. As some reviewers suggested, I added some sunflower seeds. I had to make it a day in advance, so I saved some of the dressing to add just before serving so it would be nice and moist. I wouldn't hesitate to make this again.

Slow Cooker Chicken Pot Pie Stew

This perfectly suited my need for a meal with easy prep that I could make in the morning and forget about until dinner. As I was buying the cream of chicken soup I happened to see cream of chicken with herbs, so I bought that. I also added some chopped onion and some sliced fresh mushrooms, as well as some poultry seasoning and rosemary. I served it over noodles, and it was very good and everyone seemed to enjoy it.

Oven SPAM® Sandwiches

I've been a Spam lover since I was a child, so I'm always looking for something new to do with it. I sliced and browned the Spam before I cubed it because I thought that would enhance it's flavor. I was surprised that the rolls crisped because I thought they'd get soggy. That was a plus. On the other hand, I'd say the sandwiches were only so-so. If I made them again I'd leave the browned Spam slices intact and use less cheese. I thought the cheese and relish flavor overwhelmed the flavor of the Spam.

Baked Penne with Italian Sausage

We liked this dish, but I have to wonder if substituting a jar of spaghetti sauce for the diced tomatoes and tomato paste but otherwise following the recipe would yield pretty much the same result. This would be a good dish for a pot luck.

Muffuletta Pinwheels

I wasn't paying attention and I mixed the olives with the cream cheese. Actually, I think that was better since it allowed for an even distribution of the olives. I sliced the meat and cheese into strips and put the slices all over the tortillas for more even distribution, and I used shredded mozzarella. I think more olives would have given them better flavor. I made these for a pot luck, and while many were eaten, I didn't hear any raves.

Lemon Honey Glazed Carrots

I loved these! I eyeballed the ingredients, probably added less honey and more ginger, and the results were excellent. I plan to make them again when we have guests next Friday.

Balsamic Cream Sauce

This is a delicious sauce! I doubled the sauce, sautéed some cubed chicken breast and added it to the sauce, and served it over penne. Made me want to lick the plate!

Pasta with Peas and Sausage

I was looking for something with Italian sausage and no tomatoes and this fit the bill perfectly. It's easy to make and tastes great. I did make my sauce with some half & half and skim milk, and per other reviewers, did add some parmesan to the sauce. We both really liked the taste and it's a "make again".

Ladyfingers

I wanted the challenge of making my own ladyfingers for tiramisu. While they turned out fine, I wouldn't bother making them again unless I couldn't find them in the supermarket. On the plus side, they were nicely shaped and browned nicely, and they tasted good. On the negative side, it was messy filling the piping bag and the batter was thin enough to drip out while doing so. They spread a bit and weren't as high as I'd have liked, in spite of chilling the batter as some others suggested. In any event, one more thing checked off on my list of things I've wanted to try making.

Parmesan Sage Pork Chops

Tasted great and were nice and tender. I didn't have a lemon so I used True Lemon, and my chops exceeded the recommended temperature in less than 10 minutes. Otherwise I followed the instructions exactly and was very pleased with the result. Very good breading.

My instinct told me to halve the amount of onions, and I'm glad I did. There was plenty of onion flavor, and I fear the full amount would have been too much. The rosemary combined with the caramelized onion makes for a very tasty dish.

Pastry Cream

I made this as a filling for cream puffs and it was perfect. It's not as sweet as commercial pudding and pie filling and its texture is different, so keep that in mind when making it. Be prepared to stir it for a long time as it slowly comes to a boil, but it's worth the wait. I had no problem with lumps. I had some left over and we just ate it as pudding later.

Crustless Cranberry Pie

I have to admit that I was a little disappointed in this. I had hoped for something juicier and I thought this was too dry. It really does need some whipped cream or ice cream to give it the moisture it lacks.

Pork Chops with a Riesling Peach Sauce

Please try this recipe as written. It's an entree, not a dessert! It's a great recipe for the summer when peaches are ripe. I wanted to serve some of the sauce over rice, and it didn't make all that much, so I would double the amount if I made it again. If you reduce the wine as the directions state, the sauce should be thick enough without adding cornstarch. This dish goes together quickly, and it would be an easy yet elegant dish for guests.

Strawberry Chocolate Mousse Cake

I wanted to make this for a group with a healthy appetite for desserts, so I did 1-1/2 times the crust and twice the mousse. It filled my springform pan, with a little left over. I decided to gild the lily and piped a little chocolate syrup on the top before piping on the whipped cream and adding the strawberries. I also cut up some additional strawberries and mixed them with sugar for anyone who wanted to put that on their plate too. Everyone loved it and it's very rich. I would suggest adding a little more melted butter to the cookie crumbs since mine didn't hold together as much as I would have liked. I've been wanting to try this for years and I'm glad I finally had the opportunity to try it.

White Pizza

I had some Italian sausage I wanted to use, but I didn't want tomato sauce or pasta with it. This fit the bill. I actually thought there was enough topping for two small pizzas. I used pie crust mix for my crust. Both my husband and I really enjoyed it, especially since it was a nice change from the usual Italian meal.
