Satiny Chocolate Glaze

Reviewed: Oct. 27, 2012
This was a good recipe to work with, but needed some tweaking. I was using it as a glaze on chocolate cupcakes. As some of the other reviewers stated this recipe can be grainy. I made mine on the stove and it was very stiff, like a bad grainy frosting. I think it really depends on your quality of chocolate and butter, elevation and your overall climate. To get rid of the grainy or thickness, ADD about a TEASPOON at a time of shortening to smooth it out. It may take a bit til you get the perfect consistency, but you will get there. Don't over do it as it can make the chocolate not set up the way you want. You can test it by using a spoon and seeing how it comes off it back in the pot. Too thick and slow, add more shortening. Too thin? Add more choc. I was doing 12 cupcakes. This recipe would probably make 16. I dipped sliced apples in my left overs :)

Strawberry Bread

Reviewed: Sep. 8, 2008
I had some left over strawberries so decided to find another way to eat them fast. My family didn't care for this recipe. It was too sweet and just didn't have the flavor of a good fruit flavored bread. Just doesn't compare to a Banana or Zucchini bread. Thanks for sharing though!

Chicken with Asparagus and Roasted Red Peppers

Reviewed: Sep. 8, 2008
Good Recipe, the only thing I did was use Italian style diced tomatoes instead of what the recipe called for. This is great for a pretty quick meal that looks beautiful on the table.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

Reviewed: Sep. 8, 2008
This is a great recipe! The only thing I changed were the tomatoes. Just used the normal tomatoes out of my garden and diced them up. This is a new fav for my family.

Banana Banana Strawberry Smoothie

Reviewed: Sep. 8, 2008
Great Smoothie Recipe! The only thing I did was add some ice and substitute Banana extract for Vanilla and used Splenda in place of Sugar. My bananas and Yogurt were frozen. Good consistency, not to thick or runny. Thanks!
