Dill Dip III

WOW - was this SALTY! I only used less than one tablespoon of salt and had to double the other ingredients again to cut the salt and it was still too salty! I agree with Tanya Joe's idea - maybe it should have been 1 1/2 tsp, not tablespoon. I will use it again because it is nice and fresh tasting but cut the salt to 1 1/2 tsp.

Unbelievable Spinach Calzones

Very good! I followed the recipe quite closely and it turned out great for my first time trying Calzones. I'm glad I read the other reviews because 20 minutes was definately enough and the brush with garlic butter kept it from getting hard. This is a keeper!

Skillet Ham, Cabbage and Potatoes

Not bad for a fast and easy meal. The cabbage was a little mushier than I like, so if I do cook this again I will cook the cabbage for less time. It needs something more to make it a little less bland.

Broccoli Chicken Roli

I had just enough filling - I think the trick was compressing it some by scooping it with a measuring cup and pressing it a bit before putting it on the dough. Taste was very good and the veggies were crisp-tender. My husband had the two pieces leftover for lunch the next day, then called me at work to tell me he had a "happy tummy". NOT something he would ever say. Next time I'm trying it with leftover ham!

Italian Kale

Easy and tasty!! Definately needed the 1/2 cup of water. I cooked the Kale for about 20 minutes and it was perfect. I didn't have balsamic vinegar, so I used white. Reduce the amount of vinegar if you have to use white as it was a little strong. Definately a "keeper".

Oven French Fries

If you cook these at 375 degrees they will come out greasy. Oven needs to be HOT to keep the oil on the surface and not absorbed by the potato - I cook mine at 450 and they are crisp on the outside and soft on the inside.

Chicken Cordon Bleu I

I couldn't see how the cheese was going to stay inside without a good sealing of breadcrumbs, but tried the recipe anyway. Well, the cheese all melted out and stuck to the pan. I'll stick with Cordon Bleu the traditional way.

Everyone at the table gave this recipe a five star rating! My first attempt at steamed clams and it was easy but tasted fabulous. Next time will serve over linguine. Definately a keeper!

Stuffed Mexican Peppers

FABULOUS!! I also pre-steamed the peppers in the microwave. I put four halves in a covered dish with a tablespoon of water for 2 1/2 minutes. All ingredients I used as per the recipe except for omitting the salt since I think the taco seasoning has plenty of salt. I cooked the ground beef separately since we have a vegetarian and mixed the beef with the other ingredients together after filling her peppers. I put the raw rice and the proper amount of water along with all of the other ingredients in one pot and simmered them all together. The rice absorbed all of the other flavors beautifully. I spooned tomato sauce on top of each pepper then topped with taco style cheese. What a hit!! I'm sure they'll be asking for this all the time! P.S. the peppers were from the garden! May try banana peppers or jalepenos next time!

Tartar Sauce II

Absolutely the best tartar sauce I've ever had. Everyone raved about it. I "hard cooked" the egg in the microwave, so it was super fast and easy! A definate keeper.

Philly Steak Sandwich

DELISH!! Ok, maybe not authentic Philly Cheese Steaks, but we think they are MUCH better! We used american cheese, but otherwise stuck to the recipe. Will use again.

Shepherd's Pie

Nice easy and tasty recipe. The changes I made (don't we always make changes?) were minor. Since I was doubling the recipe to feed a crowd, I doubled the meat and used a can of Cream of Mushroom soup and a cup of brown gravy. Everything else was doubled as is. Luckily I had a big bowl of leftover freshly mashed potatoes. They were nice and chunky so you knew they were fresh. Thanks for a great recipe - I'm adding it to my recipe box now!

Italian Chicken Skillet

Everybody liked it but didn't LOVE it. Next time I will try it with sausage as others suggested and maybe some more veggies. It definately was fast and easy to make and clean up was a breeze. I took a photo because it looked so good in the pan!

Okra Salad

I love okra, but hesitated making it because of the slime factor. This a very nice and fresh salad with barely a trace of slime. I am a total bacon addict (cooked six slices - three for the salad, three for the chef) but I don't think it really needed it. Next time I think I'll add some fresh herbs. It was lovely and fresh but could have used a little more zip. Basil? Crushed red pepper?

Cindy's Really Good Au Gratin Potatoes

Definately a keeper! I'm glad I read the other reviews and doubled the sauce and thinned it out just a little. Instead of bread crumbs, I grated some cheddar onto the top before baking. It was beautiful and delicious! Thanks Cindy!

Beef Brisket My Way

The smell of rosemary and vinegar was overpowering while it was cooking. I tried this recipe because I wanted something that wasn't slathered with barbeque sauce. Ironically, I had to use barbeque sauce to tone the strong flavors down!
