Whole Wheat Pancakes

Excellent! Made 16 pancakes instead of 4 at the 4" size I make them! Truly a "keeper" recipe. I used all whole wheat flour, and palm oil rather than butter for frying them. Turned out golden and spectacular.

Granola Bars

Great basic granola bar recipe. Tasty and easy. Came right out of the (greased) pan. I cut it twice - once while still slightly warm, then I went over the lines again after it had cooled completely. Worked for me. Next time I may try adding cinnamon and raisins.

Chicken Noodle Salad with Peanut-Ginger Dressing

Banana Bran Muffins

OK, hilarious story. So the ONLY reason I made this recipe was because I had bananas I needed to use up. Well guess what - got so rushed, I skipped the bananas and walnuts. :P Still tasty, but probably better with the missing ingredients!

Penne with Chicken and Asparagus

Great recipe! I doubled the broth to add flavor, and let the asparagus cook without the lid on, to rid it of the extra liquid. I also mixed in the Parmesan and some extra mixed cheeses I had on hand while the asparagus was cooking to make a bit of a cheesy sauce. After the chicken-asparagus topping was on the olive-oil-sprinkled noodles, I did add more Parmesan. Perfect! :)

Downeast Maine Pumpkin Bread

Let's see... yummy, moist, pretty, and foolproof. It's a 5, all right! This is the first bread I have made in years that actually turned out right - no runny insides, etc. Couldn't be happier, and I'm pretty sure it's the recipe - not me. :P

I rarely rate anything 5 stars, but this was easy, foolproof, and delicious, so I can't think of a reason to not rate this with a 5! Cooked a batch of 80 servings for a church event, and got big compliments!

Fennel Soup

I really enjoyed this soup! Mild and tasty, and so simple! I added the fennel leaves and small areas of the stalks. Even more delicious that way! Might benefit from 1 or 2 more seasonings, but not sure what....

Dol Sot Bi Bim Bap

Great recipe! Thanks for sharing. I did modify it a little, decreasing the sugar by half (using 1/4 C sugar and 1/4 C honey). Still, it was plenty sweet. I also omitted several ingredients I did not have, such as cucumber, carrot, and sesame seeds. Also, on one serving, I attempted the raw egg feat, but it didn't cook into the meal like I had expected, so the whole bowl of food became slippery from the egg. On other servings, I simply fried the egg on one side, then inverted it onto the food. Much better, in my opinion! I only had 1 lb. meat, so I used that. I substituted habanero hot sauce for the chili sauce, as well. Additionally, the only oil I used was a small bit to oil the dishes, and a small bit for frying eggs, spinach, sprouts, etc. I did not pour any over the finished dish. Note: To get the rice to sizzle, I had to put the rice in immediately after oiling the bowl (I used Pyrex bowls.) When I oiled more than one bowl at a time before adding rice, the rice didn't sizzle. So don't let those oiled bowls sit if you want the sizzle. :) The way I made it, I probably give it a four and a half. If I'd had the other ingredients on hand, I think that would have pushed this recipe into 5-star territory. Hence the rating.

Country Apple Dumplings

Excellent! For a less sweet, healthier, simpler version, try using the following alterations, and keeping the rest the same: .25 C butter instead of 1 C; omit sugar and increase soda by an extra 1/2 cup (16 oz - or 2 C - total). I have seen suggestions on other Web sites to use diet soda (Sprite is what I used - no caffeine!), but I am suspicious of how that might affect the taste. If you make the recipe this way, since it isn't quite so sweet, you might like to serve frozen vanilla yogurt with it. This provides healthy probiotics as well, if you use frozen yogurt with live and active cultures. Also, these alterations make the recipe more diverse - even suitable for a breakfast/brunch dish. It's not blatantly sweet enough to be only a dessert any more.
