Delicious Ham and Potato Soup
Fantastic! I just made this for my family, and it was quick and seriously excellent. I added a smoked anaheim pepper that I'd gotten from the farmers market. Also, I can't have any gluten, so I used cornstarch (2 Tb) instead of flour. I just stirred it in with the milk at the end, and added that to the pot, simmering until it thickened. Other than that, I followed the recipe as-is. I couldn't recommend it more.

Quick Alfredo Sauce
While not the best alfredo sauce I've ever tasted, this recipe is excellent for a quick fix. I thought it had an nice, simple flavor, and great, creamy consistency. The only change I made was that I used 3 garlic cloves and left out the garlic salt. Then, I added a pinch of salt and pepper. Everything else I left as-is. Those who complained of it being too bland: I wonder if it had anything to do with the type of parmesan they used. I used my favorite (in my price range) fresh parmesan, and it tasted great. *Here's a tip for keeping parmesan cheese. I buy big blocks of it from the "big box" store, and when I get it home, I remove the cheese from the plastic, and wrap it in foil. I just shred as much as I need as I go. This way, it stays good in the cheese drawer for as long as 9 months!* I threw the sauce over spaghetti noodles with a pouch of tuna and some frozen (thawed) peas, and served it with a caesar salad for a quick meal. All in all, the whole meal took me about 15 minutes. Great recipe.

Easy Oatmeal Cookies
These were really good. They have a great oat flavor. They are a soft, cakey oatmeal cookie, so as long as you are expecting that, you will likely be happy with the recipe. We used chocolate chips, pecans instead of walnuts, apple sauce for the oil, and whole grain pastry flour in place of all of the all purpose flour. This is the perfect sort of recipe to sub whole grain flour without compromising flavor or texture. I also added 1/2 a cup of coconut, and left out the nutmeg. I suppose with all the changes we made, I cannot write a pure review on the recipe, but I kept all of the original measurements, and used the recommended cooking guidelines. They were quick and easy to make, used ingredients that most people always have on hand, and turned out quite delicious. I do recommend making them if you like a soft texture every now and then.
