Mexican Fiesta Pasta Salad

WOW! This pasta salad is great! Served it for Father's Day and it was well received. What a welcome change from regular pasta salads. As people tasted it, you could see the look of surprise on their faces... no one expected a pasta salad with zip and a lot of people went back for seconds. The medium salsa was perfect for most tastes, I don't think I would use a hot salsa. Wish I had doubled the recipe, because I love this salad and would have liked to have leftovers for myself and to send home with others... lol Several people asked for the recipe; always a good feeling when you're cooking for others.

Colleen's Slow Cooker Jambalaya

Flavor wasn’t bad but it was very spicy. Personally I’d call this soup, not Jambalaya. Jambalaya has rice cooked together with the rest of the ingredients and it‘s not soupy. I’ll stick with a more authentic recipe like the “Oven Baked Jambalaya” on this site. And be sure to try the “Creole Seasoning Blend”, also on this site, IT ROCKS! It’s all the Cajun seasoning you’ll ever need.

Creole Seasoning Blend

WOW!!!!! This stuff really ROCKS!!!!! I made up a batch for the "Oven Baked Jambalaya" (on this site) and never realized how much I would use this seasoning. Don't know how I even got along without it. I use it on everything... chicken, chops, stew, popcorn and even stirred it into mayonnaise for a "Cajun Mayo" for sandwiches. My friends and neighbors are getting a jar of this for Christmas next year... I know they'll love it. Try it you'll love it too!

Oven Baked Jambalaya

OOOOO EEEEE! Now this is some good eats! Reminds me of New Orleans and Mardi Gras. Very authentic and so easy to prepare. Everyone loved it, even my fussiest eaters. Seemed a bit spicy in the beginning but after it cooked it was perfect. Made a ton so I froze two containers for future meals. We are a very busy family so cooking once and getting three meals is a definite PLUS+++! Be sure to try the "Creole Seasoning Blend" too (on this site)...IT ROCKS! Thanks Joslyn... EXCELLENT!!!!!

Fifteen Minute Macaroni & Salmon Salad

So fast and so easy. I loved this recipe, as did the "FUSSY" people in my household who won't eat macaroni salads because of the "too crunchy" onion, green pepper or celery, found in most macaroni salad recipes. I used drained canned chicken... delicious! Think I may add a few chopped hard boiled eggs next time. And for those (like me) who like onion, green pepper or celery in their Macaroni salad, it can always be added to this recipe. Cooking for "FUSSY" eaters can be a challange... thanks, Joslyn, for a great recipe.
