Easy Salsa Meatloaf

I made this pretty much as is and it turned out great! Nice and juicy with great flavor! I did have to cook it a little longer to get it done. I also couldn't help but slather 1/4 C Ketchup, 1 T Brown Sugar, a splash of W sauce and a dash of Ceyanne, during the last 10 minutes or so. And there is no way this serves 6 people. 3 servings is a much closer estimate. Thanks for the recipe Tink!

Sandy's Casserole

This was a good clear out the cabinet recipe. I cut the recipe in half and used a left over chicken breast, colby cheese (all I had), cream of mushroom soup, some veggies I had left over and tossed it all in a 9x9 pan. It turned out really good and didn't take any time at all. Thanks a lot Sandy!

Italian Peas

I made this recipe as written tonight and it came out fantastic. My wife and I were really surprised by how much difference such a small recipe could make in "just peas". There is also a ton of opportunity for tweaking in there as well! Great Recipe and Thanks!!

Burrito Pie

This was really good! I made it pretty much as written. The only made two changes. I cut it in half so it would fit in a 9-inch pie pan (which it still didn't. And I made it with ground turkey. Next time I will probably spice the meat a bit more as it turned out just a little bland for our taste. Maybe a half package of taco seasoning... Otherwise a really good recipe! Thanks alot!

Saltimbocca alla Pollo

This was very good. I made it as written with just a couple changes. I added some mushrooms with the wine(be careful not to add them to hot liquid though because they will pop), and then added some chicken broth to the sauce before I added the corn starch. I'm glad I added the mushrooms because they went very well with the dish. My only complaint is that the chicken was a little dry for my taste. Next time I will probably brine the chicken before hand. Other than that, it was absolutely delicious and I will be making it again.

Blackened Chicken

Ok, I was looking forward to making this and really wanted it to turn out well. Unfortunately, we really didn't care for this. I made it exactly as the recipe stated except I only heated the pan for 5 minutes, in an effort to reduce the smoke other reviewers complained about, and I added a little garlic powder. For us, the cumin and paprika really overpowered the chicken and other spices. It wasn't too spicy, like some complained about, but more overpowering than anything else.

Spanish Rice II

This was really good. We've always been fans of spanish rice, but hate using the prepackaged stuff. This came out just right. I made it as writted, except used chicken broth and added a half teaspoon of cumin. When I first started making it, it looked like it was going to be WAY too much onion, but it turned out just right. And the spice was dead on. Definately a keeper.

Chicken Breasts Pierre

This was very good. The chicken was juicy and had good flavor and the sauce was real good too. As many suggested, I reduced the chili powder by half and used chicken broth instead of water. I also skipped coating the chicken in flour and just browned the breasts because that's the way we prefer it. All in all it turned out really good. Next time I'll probably add a little onion and a little cornstarch to thicken the sauce a bit.

Anaheim Fish Tacos

This was a very good recipe! I did take everyones advice and spiced it up and also thickened it with sour cream and cornstarch. One thing I will note though, if you like your tomatoes cooked and are using thin fish filets, you will want to cook the tomatoes for about 5-10 minutes before you put the fish in because the fish will cook much faster than the recipe says.

Chipotle Shrimp Tacos

These were very good. I did make a couple changes though. I used a heaping tablespoon of diced jalapenos, because that's what I had on hand. I also added a can of black beans and omitted the bacon to lower the cholesterol. Topped them with shredded lettuce and tomatoes. It was quick, easy and good!

Tangy Grilled Pork Tenderloin

This was very easy and very good. As recommended in other reviews, I added two cloves of minced garlic to the marinade and marinated for about 4-5 hours. I also added a cup of chicken stock to the left over marinade and boiled to use as a dipping sauce. I will also add that the tenderloins took longer than I expected to get up to temperature.

Penne with Garlicky Broccolini

This wasn't bad, it just wasn't overly good. But it did make the house smell wonderful. If you like pasta with sauce, this definately isn't for you. Because there isn't much sauce and it's a little bland. Good garlic flavor, but bland on the whole.

Easy Honey Mustard Mozzarella Chicken

We liked this quite a bit. I used just regular honey mustard since we had it on hand. I cooked the bacon in a skillet while the chicken was cooking and crumbled it on top instead of using the strips. Then we cooked some potatoes in the bacon grease and served with a salad. Not very healthy, but still very good on the whole. But I wanted a little more flavor from the chicken. Maybe it needed to be marinated or something. I'll play with it, but it will definately stay in the rotation.

Chocolate-Bottom Mini-Cupcakes

I was going to post this recipe but found that someone had already beat me to it. My Mom made these for us when we were kids (I'm 41) and we called them topsy turvy cupcakes. They are very easy and very good! The only difference is that we used a whole (small) bag of chocolate chips in the filling and added nuts to the batter. And we made them as full cupcakes. We baked them at 350 for 30 to 35 minutes.

Grilled Chicken with Herbs

I'm not a big fan of vinegar in general, so I was a little leary of this recipe, especially with a half cup in the marinade. But the wife and kids love balsamic, so I thought I would give it a try. It turned out fantastic! We pounded out the chicken breasts and doubled the garlic. We didn't have any sage so we just went without and marinated it for about 4 hours. Very juicy, flavorful and didn't have an overpowering vinegar taste to it.

Clam Sauce with Linguine

I made this with a few changes and it turned out fantastic! My wife just would not stop raving about it. I cut the recipe in half, because there are only two of us. I doubled the garlic and doubled the clams. But the second can of clams were drained. I added some red pepper flakes and also added about a half cup of good white wine. It turns out to be a very special dish. You could definately put it into your rotation or keep it for special occasions.
