Tiramisu II

This tiramisu was far better than any I have ever made before, and there is no way to possibly understand how delicious it is without trying it yourself. I ended up tripling the rum and coffee mixture, and I dunked the ladyfingers into this mixture one at a time rather than drizzling the mixture over them. It made for a flavorful, moist and cake-y tiramisu.

Tofu Parmigiana

Breaded tofu...why didn't I ever think of this before?! This recipe was really good and I would probably be giving it 5 stars if only the amount of tomato sauce was increased just a little bit (it tasted somewhat dry to me). I added some minced and sautéed yellow onion to the tomato mixture and served the dish with some sliced cherry tomatoes.

Focaccia Bread

Absolutely unbelievable. I subbed milk for water, left out the garlic powder, and I added rosemary sprigs and finishing salt to the top of the bread after it had baked. Served alongside a dish of oil, balsamic vinegar and red pepper flakes, this focaccia made an amazing appetizer.

Cranberry Muffins

I made these muffins with 1/3 cup of canola oil instead of shortening, and I chose to omit the topping as well. They were really really good and I loved the spices! The fact that they were dairy-free was an added bonus too.

Beet Salad with Goat Cheese

This salad is incredible! I added some roasted asparagus on top, and I also used canned beets rather than fresh ones simply due to convenience. I was able to whip this whole thing up in less than 15 minutes, and it was great!

Glazed Almond Bundt Cake

Delicious! I made this with a group of kindergartners and it all went off without a hitch. We crushed the almonds by putting them in baggies and letting the kids smash them with blocks. This is a really easy and kid-friendly recipe with an incredible outcome! The glaze is the best!!

Sugar Coated Pecans

I made this recipe with almonds instead of pecans. I added about 1/2 T of vanilla to the egg mixture and other than this I made no other alterations. I absolutely can't wait to make these almonds again! They disappeared much more quickly than I had anticipated:)

Winter Fruit Salad with Lemon Poppyseed Dressing

Great dressing! And I love the idea of mixing crunchy fruit into a lettuce salad. Next time I make this I think I will add Asiago or Parmesan cheese to the mix instead of Swiss as I would have liked a stronger flavor of cheese.

BBQ Chicken Pizza II

Yum! I made my own dough and baked it for about 5 minutes before adding the toppings to it. I prepared my chicken by simmering it in a water-barbeque mixture and then shredding it while it was cooking, which made it really tender and flavorful. The pizza turned out great, and I thought the onions and peppers made a great combination with the chicken!

Sesame Noodles

I think that this dish has the potential to be amazing but...as written, it is WAY too oily. I would definitely recommend cutting the oil by at least half. Other than this I thought the dish was great. I added some edamame and shredded carrots to the noodles for some extra flavor and texture and I thought they blended in very nicely.

Soy Ginger Salmon

Incredible! This is one of the most delicious salmon dishes I have ever had. I was only able to marinate the fillets for 1 hour but they turned out so well that I can't imagine how another 2 hours in the marinade would have made that much of a difference. As other reviewers recommended, I turned the marinade into a sauce by simmering it on the stove and adding some cornstarch to thicken it. It was fantastic. Overall, this is one of the best recipes I have ever gotten from Allrecipes!

Salsa Chicken Burrito Filling

I made a few alterations to the recipe by adding a fresh diced jalapeño and by omitting the taco seasoning and upping the spices to compensate. I served the chicken as a burrito wrapped in a flour tortilla. I thought that it was tasty and had a lot of potential...next time I will add more ingredients to the chicken such as onions and maybe some avocado. I think that with just a little more flavor in it this recipe could be amazing!

Stuffed Peppers My Way

These were terrific! This was my first time making stuffed peppers and I was surprised by how easy they were to put together. I made a few alterations/additions: I sauteed some mushrooms and added them, I added some corn and minced garlic, and I mixed in a little tomato sauce at the end. I can't emphasize enough how good these were and I definitely forsee these becoming a staple in my household!

Pizza Dough I

This was my first time making pizza dough and now I will NEVER go back to the store-bought kind! This dough was delicious and incredibly easy to make. The only changes to the recipe I made were to let the dough rise for about 30 minutes after making it, and I also added some dried basil. I can't imagine a better recipe!

Baked Zucchini Chips

This recipe was fun to make but it just wasn't what I was hoping for. Both my husband and I agreed that the egg whites made the zucchini taste overwhelmingly eggy, and the bread crumb-combo on the chips just didn't blend well with the other flavors. Other people clearly like this recipe; I guess it just wasn't for us.

Spicy Baked Sweet Potato Fries

"Amazing" doesn't even BEGIN to describe how tasty these fries are! Used black pepper, garlic salt and sea salt instead of taco seasoning, and found that 30 minutes in the oven was enough (although I only used 2 sweet potatoes, so maybe that made a difference on the timing). I can't wait to make these again! Great with ketchup.

Eggplant Parmesan II

This was really good. The only real issue I had was that the eggplant turned out kind of rubbery; maybe next time I will prepare it differently as was recommended by other reviewers. I still really enjoyed this recipe though and the leftovers tasted wonderful the next day!

Homemade Black Bean Veggie Burgers

These tasted great but the consistency was a little off (they were too mushy, possibly because I cooked them in the oven). I substituted a fresh chopped jalapeno for the cumin and chili powder, as was recommended by a previous reviewer, and I thought the mingling of tastes was excellent. These are so filling! I will definitely make these again, but I will probably grill them next time in order to make them a little crispier.

Avocado Mango Salsa

Oh wow, I can't get enough of this salsa! I served it on top of salmon burgers for dinner and it was amazing! Really filling too. What wasn't finished at dinner was eaten later as a dip for pita chips. The only change I made to this recipe was to add a jalapeno pepper instead of a habanero, and I thought that it added a great kick. Thank you so much for this wonderful recipe!
