Maybe one day I won't be so skeptical... this is very good! soup. I, too, added extra can of chicken broth (in place of water), added corn and zucchini, extra garlic and cilantro, and used HOT enchilada sauce. It was too spicy for the kids, but we loved it (we like spicy food) BUT I added a 28oz can of whole, peeled tomatoes and their juice rather than only a 15 oz can and I think that helped bring the spice down a bit. Otherwise, maybe a can of mild enchilada sauce (in addition to the hot) would have the same effect? Also, I added the Tyson individually frozen raw chicken breasts (4)and it was a perfect amount. cooked 6 hours on Lo, 1 hour on high. (chopped the chicken before putting on high)
