This past Friday my family decided that it was time for Daddy to pass another test in the kitchen. I’ve been doing the mystery dinner or make something fast out of what we got gig for some time now and I have to admit, I was getting a little lazy. I was falling back on the same old tricks & MORE

I recently went to a charity event where one of the auction items was 2 tickets to a taping of Iron Chef America at the Food Network Studios inside of Chelsea Market in NYC. My wife & I signed confidentiality agreements before we walked onto the set so I can't tell you who the chefs were,… MORE

It was the annual auction at my childrens' school. I knew I wasn't going to bid on any golf packages or sports memorabilia. I was just following my wife around the room exchanging fake smiles & insincere pleasantries with parents that tonight were our rivals when I saw it. I knew… MORE

The city of New Orleans and the whole state of Louisiana got a 74 yard head start on Mardi Gras last night when Tracy Porter stepped in front of Reggie Wayne, made off with a Peyton Manning pass and sprinted for the end zone. It was moment that will live in infamy and will be talked about for… MORE

Good morning - As we all know the New Orleans Saints are going to be playing against the Indianapolis Colts in the SuperDuperBowl down in Miami on Sunday February 7. Now picking out different apps or dishes to make to represent New Orleans & Miami is like shooting fish in a barrel. It's… MORE

The NFL Regular Season came to end last night when the Cincinnati Bengals, rather than showing up in the freezing cold for a meaningless game, decided to take the night off to go see the tree in Rockefeller Center & to see who survived the plane crash on Desperate Housewives.… MORE

I have always taken a Treasure of the Sierra Madre style stance with regard to New Year's Resolutions. You know the line, "Resolutions ? We don't need no stinkin' resolutions !". Of course somehow or another I always make the same ones - work out, lose weight, apply to… MORE

Well I have to admit that my shoulder is still a little sore from patting myself on the back over the traveling road turkey from Thanksgiving Day. Everything including the stoplights on Route 206 worked in my favor and that 22 lb bird came out juicy & tender and got rave reviews for the… MORE

About Me
My mother decided early on that her sons would never have to rely on someone to feed them so we all learned to cook at an early age. I really started to branch out when I moved out west to Denver, SF & Dallas. Combine that with extended business travel to Louisiana & my growing love of spices and you get a real mix of flavors.
My favorite things to cook
Love to make cajun food with my favorites being crawfish pie, alligator stew & alligator chili - I go nuts on Super Bowl Sunday
My favorite family cooking traditions
We didn't have a lot of traditions per se but you could count on pancakes or waffles on sundays - dad making scrambled eggs twice a year on christmas morning & mother's day - veal parmagiana on christmas eve, Thanksgiving with Grandma Matthews and any menu of your choice on your birthday. We weren't a spicy family so I learned a lot of good strong basics in the kitchen from Mom that I have carried over into my cooking today.
My cooking triumphs
I love to experiment with variations of dishes I try around the country. My biggest success is here on allrecipes where I had 2 recipes published in the same cookbook - Southwestern Turkey Soup & Curried Carrot Soup. I think my corn muffins are a great starting point and my alligator chili has become a much requested Super Bowl favorite.
My cooking tragedies
There have been a few times in the past where I tossed everything and took everyone to a restaurant instead. I'm not too proud to say my cooking is awful when it really is.
