Cheeseheads Rejoice ! The Anthem has been botched. The commercials have been watched. The Half Time Show has shown which super group is really nothing more than a very generous mixing board. The food has been consumed. The time has expired and the confetti cannons have been fired. The Green Bay MORE

Let’s be honest, nobody cares about the NFL Pro Bowl. Nobody that is except for the player’s wives and the player’s agents and the only reason they like the NFL Pro Bowl is because it takes place in (except for last year when they foolishly played it in ). They also get an extra paycheck and… MORE

I know I am starting to sound a little bit like a broken record but what a great weekend of football we just had this past weekend. On Saturday, during the early game we saw a Steelers team that looked beaten at halftime come back out and take complete control of their destiny. In the evening… MORE

The National Football League Wildcard Playoffs have come and gone. We saw a veteran guest rudely show their young host the door, a young quarterback beat a timeless veteran in the final seconds, another quarterback got bitten by a game ending interception and the run of a lifetime caus MORE

The regular season portion of the National Football League schedule has now been completed. After 17 grueling weeks, the field for the playoffs has finally been set and the participants all have one goal in mind. They all want to get to Cowboys Stadium on February 6, 2011 to play in the Super… MORE

It’s that time of year again when the jingle bells are jingling, the bell ringers are ringing, the carolers are caroling and my wallet is stinging. It’s Christmas. True, it seems like it has been here since August (and in some stores it was here even earlier than that) but now the finish line… MORE

Based on the recipe of mine that allrecipes.tv spotlighted in their latest episode of What's Cooking? and the name of this blog, you might begin to think that I spend more of time shopping in the Atchafalaya River Basin than I do in my local grocery store. If I lived in Louisiana instead of New MORE

About Me
My mother decided early on that her sons would never have to rely on someone to feed them so we all learned to cook at an early age. I really started to branch out when I moved out west to Denver, SF & Dallas. Combine that with extended business travel to Louisiana & my growing love of spices and you get a real mix of flavors.
My favorite things to cook
Love to make cajun food with my favorites being crawfish pie, alligator stew & alligator chili - I go nuts on Super Bowl Sunday
My favorite family cooking traditions
We didn't have a lot of traditions per se but you could count on pancakes or waffles on sundays - dad making scrambled eggs twice a year on christmas morning & mother's day - veal parmagiana on christmas eve, Thanksgiving with Grandma Matthews and any menu of your choice on your birthday. We weren't a spicy family so I learned a lot of good strong basics in the kitchen from Mom that I have carried over into my cooking today.
My cooking triumphs
I love to experiment with variations of dishes I try around the country. My biggest success is here on allrecipes where I had 2 recipes published in the same cookbook - Southwestern Turkey Soup & Curried Carrot Soup. I think my corn muffins are a great starting point and my alligator chili has become a much requested Super Bowl favorite.
My cooking tragedies
There have been a few times in the past where I tossed everything and took everyone to a restaurant instead. I'm not too proud to say my cooking is awful when it really is.
