Late this summer the Christmas decorations started to appear in CostCo. As September rolled around, reports of other Christmas displays came filtering in from Home Depot & other “Big Box” stores. Christmas music could be heard on the radio and in department stores. In recent days even MACY’S,… MORE

Greetings from 35,000 feet - the home of pre-packaged food that you once got for free and where now you willingly pay not to eat it. Yes I am traveling again and though I didn’t have any connections or delays, I did have a few thoughts I couldn’t help but sharing with all 3 or 4 of my… MORE

(As fate would have it, just as I got my Pro membership back, I got selected to ride on the Munchmobile this summer. Here is the entry that got me a ride on the Big Dog) Call me Ishmael. But if you do, don’t expect me to answer for this is the story of my elusive quest for the obsession of my… MORE

I remember a surprise quiz that my 5th grade math teacher, Mrs. Conroy, gave our class one spring morning. When she handed out the two sided quiz she made sure to tell us in her two pack a day raspy voice to read the all of the problems on the whole quiz before we started our work. Yeah,… MORE

I travel for work. I travel for work a lot. Some would say that I travel for work too much and at times I would tend to agree. One of the offshoots of all this travel time is that I spend a great deal of time alone with my thoughts. That in and of itself could be a dangerous thing but for the… MORE

There is a reason that the Oddsmakers in Las Vegas love me so much and my more than slightly inaccurate prognostications last weekend were a prime example of why. After predicting (not publicly and indeed well after the fact) all four wildcard games correctly the previous weekend, I only got… MORE

The game was deep into the 4th quarter when the doorbell rang. I hadn't been expecting anybody so I was both curious & annoyed to be pulled away from the television at this crucial stage of the game. When I opened the door I was handed a pizza by a delivery guy who turned away quickly without… MORE

The Masters, the greatest golf tournament on the face of the earth, began earlier today in Augusta, GA. In 2008 I was lucky enough to attend and I wrote a blog about the lore, the majesty and the once in a lifetime experiences that were part of the trip. One of those experiences revolved… MORE

About Me
My mother decided early on that her sons would never have to rely on someone to feed them so we all learned to cook at an early age. I really started to branch out when I moved out west to Denver, SF & Dallas. Combine that with extended business travel to Louisiana & my growing love of spices and you get a real mix of flavors.
My favorite things to cook
Love to make cajun food with my favorites being crawfish pie, alligator stew & alligator chili - I go nuts on Super Bowl Sunday
My favorite family cooking traditions
We didn't have a lot of traditions per se but you could count on pancakes or waffles on sundays - dad making scrambled eggs twice a year on christmas morning & mother's day - veal parmagiana on christmas eve, Thanksgiving with Grandma Matthews and any menu of your choice on your birthday. We weren't a spicy family so I learned a lot of good strong basics in the kitchen from Mom that I have carried over into my cooking today.
My cooking triumphs
I love to experiment with variations of dishes I try around the country. My biggest success is here on allrecipes where I had 2 recipes published in the same cookbook - Southwestern Turkey Soup & Curried Carrot Soup. I think my corn muffins are a great starting point and my alligator chili has become a much requested Super Bowl favorite.
My cooking tragedies
There have been a few times in the past where I tossed everything and took everyone to a restaurant instead. I'm not too proud to say my cooking is awful when it really is.
