It’s Friday and this has been a very long week. Much like everyone else out there, my mind is hardly focused on the task at hand and I just want quitting time to get here as soon as it possibly can. With that in mind and considering how close we are to that Super Bowl of Food Holidays –… MORE

A little over a week ago I wrote a blog about football in which I compared one of the teams (San Diego Chargers) to an inferior Fish Taco and as somewhat of a throwaway line, I said that Tilapia does not belong in a Fish Taco. The inference in what I wrote and how I wrote it was that I felt… MORE

I have a six burner stove top in the center island of our kitchen. When we had the kitchen completely redone in the summer of 2008, it was one of the things that my wife & I both agreed on immediately. Four burners had never been enough because we always seemed to have more & more going on… MORE

I only have time to write up a quick update today on The DIE-t I love to hate because to be honest, I have really been busy at that other 4 letter word we all love to hate – work – and since they pay the bills (somewhat) I kind of have to give them priority over the somewhat mindless missives… MORE

Three weeks ago on the advice, no let’s be more accurate, the DIRECT ORDER of my cantankerous & curmudgeonly doctor I went on a diet. So I thought it was time to check in with an update on the 10 Reasons Why I Hate My Diet. 1 – I hate my diet because it has the letters “D – I – E” in… MORE

This week on Dancing With The Stars it was “Ballroom Greats” night. If that isn’t a showstopper, I don’t know what is. I didn’t bother taking down the names of the three “ballroom greats” that worked with our six remaining couples because at the end of the night, it didn’t matter. The only… MORE

Once again we were back in the Why Hasn’t Any Corporation Slapped A Product Placement Name On This Yet Crystal Ballroom. Last night was Guilty Pleasures Night and I do have to give a serious thumbs up to the booking people at ABC. It was pure genius to bring back a grown up HANSON and have them MORE

It really came as no surprise. My belts had been shrinking for some time, my fuller cut shirts weren’t as loose as they were before and my “fat” suits were beginning to fit me again while my good suits were starting to get moved to the back half of the closet. The video I watched of myself… MORE

It’s been a few weeks since I last let my fingers trip the light fantastic across the keyboard while recounting the glory that is Dancing With The Stars. Work and other obligations have been to blame (as well as an acute case of laziness) but have no fear, I watched this week on both Monday… MORE

About Me
My mother decided early on that her sons would never have to rely on someone to feed them so we all learned to cook at an early age. I really started to branch out when I moved out west to Denver, SF & Dallas. Combine that with extended business travel to Louisiana & my growing love of spices and you get a real mix of flavors.
My favorite things to cook
Love to make cajun food with my favorites being crawfish pie, alligator stew & alligator chili - I go nuts on Super Bowl Sunday
My favorite family cooking traditions
We didn't have a lot of traditions per se but you could count on pancakes or waffles on sundays - dad making scrambled eggs twice a year on christmas morning & mother's day - veal parmagiana on christmas eve, Thanksgiving with Grandma Matthews and any menu of your choice on your birthday. We weren't a spicy family so I learned a lot of good strong basics in the kitchen from Mom that I have carried over into my cooking today.
My cooking triumphs
I love to experiment with variations of dishes I try around the country. My biggest success is here on allrecipes where I had 2 recipes published in the same cookbook - Southwestern Turkey Soup & Curried Carrot Soup. I think my corn muffins are a great starting point and my alligator chili has become a much requested Super Bowl favorite.
My cooking tragedies
There have been a few times in the past where I tossed everything and took everyone to a restaurant instead. I'm not too proud to say my cooking is awful when it really is.
