Greetings from 35,000 feet - the home of pre-packaged food that you once got for free and where now you willingly pay not to eat it. Yes I am traveling again and though I didn’t have any connections or delays, I did have a few thoughts I couldn’t help but sharing with all 3 or 4 of my… MORE

I remember a surprise quiz that my 5th grade math teacher, Mrs. Conroy, gave our class one spring morning. When she handed out the two sided quiz she made sure to tell us in her two pack a day raspy voice to read the all of the problems on the whole quiz before we started our work. Yeah,… MORE

I’m happy to report that I am now halfway there in my 25 year quest to once again bite into a ripe juicy apple. It seems like it was a longer than a year ago this month that we started with the extractions and even though I only wore a full upper denture for 9 months of that time, it… MORE

I think this was the first weekend in I don’t know how long, not including weekend trips out of town, that I didn’t go to my local ShopRite for anything. A weekend without a trip to the grocery store felt a lot like Anita Bryant without her orange juice. I didn’t even realize it until late… MORE

(Part 3 in an ongoing saga)It’s been a while since I last gave my handful of readers an update on my quest to once again be able to take a bite out of a crisp ripe apple. There really hasn’t been all that much to report other than I got a new & improved upper denture that looked and felt more… MORE

It was early on Saturday afternoon and I was at my son’s Full Ice Cross Ice Hockey Game watching a slightly more spread out version of little kid soccer (they fall down on skates) when my blackberry buzzed. It was my wife and she wanted me to know that it was snowing and she wanted to know… MORE

A few weeks back, Hurricane Sandy blew off the few remaining leaves that were still clinging to the trees and then she blew down the trees. The Halloween That Wasn’t has been forgotten except for the stray Kit Kat or Butterfinger in one of my kids’ pumpkin buckets. Even the wild turkeys… MORE

As the fall days continue to slide by on the calendar, I have begun to notice something in the air other than falling leaves, morning frost and a passing hurricane. I first started to feel it when I noticed that the lawn mowers at the garden store had been replaced by lawn ornaments that… MORE

Back in April I announced to my handful of readers that I hadn’t been able to bite into a crisp ripe apple for the past 25 years and that it was high time to do something about it. I was going to hit the long & painful road to a full set of dental implants or as I like to call them, screwed… MORE

About Me
My mother decided early on that her sons would never have to rely on someone to feed them so we all learned to cook at an early age. I really started to branch out when I moved out west to Denver, SF & Dallas. Combine that with extended business travel to Louisiana & my growing love of spices and you get a real mix of flavors.
My favorite things to cook
Love to make cajun food with my favorites being crawfish pie, alligator stew & alligator chili - I go nuts on Super Bowl Sunday
My favorite family cooking traditions
We didn't have a lot of traditions per se but you could count on pancakes or waffles on sundays - dad making scrambled eggs twice a year on christmas morning & mother's day - veal parmagiana on christmas eve, Thanksgiving with Grandma Matthews and any menu of your choice on your birthday. We weren't a spicy family so I learned a lot of good strong basics in the kitchen from Mom that I have carried over into my cooking today.
My cooking triumphs
I love to experiment with variations of dishes I try around the country. My biggest success is here on allrecipes where I had 2 recipes published in the same cookbook - Southwestern Turkey Soup & Curried Carrot Soup. I think my corn muffins are a great starting point and my alligator chili has become a much requested Super Bowl favorite.
My cooking tragedies
There have been a few times in the past where I tossed everything and took everyone to a restaurant instead. I'm not too proud to say my cooking is awful when it really is.
