Mexican Corn on the Cob (Elote)

I couldn't find cotija cheese so I used grated parmesan. It turned out great. I have also used this recipe with corn cut off the cob. It was very creamy and had a great flavor.

Chocolate Trifle

Great recipe. I prefer to make this a day ahead. The chocolate pudding mixture seems mousse-like after it has been refrigerated for a day. It would probably be good with french vanilla flavored cool whip too.

Simply Lasagna

Very easy and very tasty recipe. I added about 8 ounces of feta cheese with the ricotta for more flavor. I also boil the noodles for about 5-6 minutes and let them finish cooking in the oven. The lasagna is much easier to assemble with partially cooked noodles.

Nanaimo Bars III

Great recipe. I doubled it and used a 9x13 pan - it was empty at the end of the day! Custard powder was hard to find. I bought it at Meijers in the international food aisle. This is not a common dessert in Kentucky and was a welcomed change. I'll definitely make it again.

Fish Tacos

This was my first experience with fish tacos. I had never tasted nor tried to cook them before. I have to say I won't be cooking them again. The sauce is good but when I put it all together I just didn't care for it. Not my kind of dish. But my husband did like it.

Old-Fashioned Chocolate Fudge

This is the same recipe my mom uses for fudge and it is always great. It's better to make it on a day when the humidity is low and always cook it slowly to the desired temp. You can also add additional flavoring (rum extract, etc) in place of vanilla.

I used a bag of shredded slaw mix and pre-cooked bacon to save time. I also left out the cheese. It still had a great flavor. It's all about the bacon. The more the better!

Jalapeno Popper Spread

Great recipe. I added 1 cup of mexican blend cheese and 2 4-oz. cans of jalapenos for some extra kick. I also topped the dish with a sprinkle of parm cheese before baking it. Everyone loved it. It's truly addictive.
