Garlicky Baked Butternut Squash

This is definitely the best preparation of butternut squash I have ever experienced. The squash came through with such a delicate sweet flavor that paired nicely with the garlic and parsley. I left out the parmesan as one of my guests can't have dairy and it was delicious. Next time I will try it with the parm.

Soft Chocolate Cookies

To Die For Blueberry Muffins

I gave this recipe 5 stars because I loved the muffin part and topping! I didn't actually eat more than one muffin because I used dried blueberries as that is all I can get here in South America (someone sent them) and I decided I'm not a fan. But with fresh Alaskan blueberries I can imagine these would be the best ever :) I don't think the recipe needs any tweaking, except to maybe half the topping if you're making oversized muffins. Also, to those who mentioned the topping made a huge mess, I think brown sugar may melt more readily than white sugar. I used white sugar and it stayed right in place, but with brown sugar on something else I made it melted right away. Just a guess!

Chicken Breasts with Balsamic Vinegar and Garlic

Amazing flavor! Next time I will add more mushrooms and maybe more garlic (just because I want more!). I wouldn't actually change anything, though. It's perfect!

Chicken Tortilla Soup II

Delicious! I added extra cumin, cooked the chicken previously and used the stock from that. I also used fresh chopped tomatoes. Tasted just like what I used to eat in Mexico.

Taco Seasoning I

Delicious! I use this for chicken and add a little water and cornstarch along with the seasoning when almost done cooking. Way better than store-bought!

Bran Flax Muffins

These are really good! I left out the raisins, used applesauce instead of oil and added nutmeg and ginger. I'm not sure if you can buy flax seed in the store already ground since I live in Peru and never looked for it in the states, but I just ground it in the blender. I also used pecans and almonds. It made 24 muffins for me, but they were kind of small. Super moist and flavorful!
