Pork Chops with Raspberry Sauce

I made according to the instructions except I substituted the white wine vinegar for balsamic vinegar. My family (hubby and kids ages 7, 6 and 3) loved this! Which is saying a lot given that no one in our family really likes pork. I served with mashed sweet potatoes and steamed veggies. Will definitely make again!

Beth's Spicy Oatmeal Raisin Cookies

I have made these cookies more times than I can count and not only have they become my absolute favorite, but I always get RAVE reviews. They are the perfect mix of salty and sweet. When I make a batch I have to take some to the neighbors otherwise I'd sit and eat them all! I have started substituting the white sugar for raw sugar and there's no difference in the flavor or texture. I have also made the recipe with all butter rather than shortening and again, no noticeable difference. The BEST cookie!

Easy Decadent Truffles

These are amazing! I've been making truffles as part of my holiday goodies for over six years, using Martha Stewart's recipe. While they are excellent, they are also VERY time consuming! Now, with soon to be three children ages four and under I really needed something quick that I could do start to finish at nap time - and this recipe was it! I honestly can't even taste the difference between these and Martha's and neither could my husband! And they were ready in a quarter of the time! I HIGHLY recommend this recipe and plan to use it every year from this point on!

Famous Butter Chicken

I'm always on the lookout for toddler friendly food and with a little variation, this recipe was perfect! I cut the breasts into strips, then dipped them in egg and coated them with cracker crumbs. Also, I used my coffee grinder to grind the crackers very fine so I could get a good, even coating. Whip up a little dipping sauce (or open a jar like I did) and you've got tasty chicken fingers any toddler will love! The best part was that they cooked in only 13 minutes! Quick and easy! Kuddos!
