Baked Salmon II

Reviewed: Jan. 2, 2008
This was fantastic! The only changes I made were that I added a little bit of dill to the marinade and I also cut back a bit on the oil. I agree with another reviewer that cooking the salmon too long dries it out, so I baked it at 400 degrees for about 15 minutes and then broiled it for 5 minutes to crisp the garlic on top of my fillets. Oh, and I didn't wrap the salmon in foil, I just left it in the baking dish to cook it. It was perfect and totally moist inside. The flavor was fantastic! My whole family really enjoyed this, even my husband who cringes everytime I tell him I am making fish for dinner. I will definately be making this again. Thanks for the recipe!

Bacon-Wrapped Asparagus

Reviewed: Jan. 1, 2010
Very Good! I had small asparagus spears so I cut the bacon into 3rds and wrapped each piece around 2 asparagus then secured with the toothpick. They looked and tasted great!

Mom's Chicken Paprika

Reviewed: Oct. 26, 2008
This was fantastic! I made a couple of minor adjustments to the recipe. I added sliced fresh mushrooms when I added the onions. I also used more paprika, salt and pepper. I also used a bit more milk and flour to make the sauce a bit thicker (sorry, I didn't measure). My whole family loved this served over egg noodles with steamed broccoli and extra sauce on the table!

New England Clam Chowder I

Reviewed: Nov. 13, 2009
This was so good! I did make a couple of changes as other reviewers suggested. I added the butter while cooking the bacon and onions. I used clam juice instead of the water. I also used about 2 tbsp of potato starch (potato flour) to thicken the soup. I used 1 cup of heavy cream and 3 cups of half and half. I also used 3 cans of chopped clams and 1 can of whole baby clams, because we like to really taste the clams in our chowder. After cooking the bacon, onions, and potatoes on the stove I transferred everything to my crockpot and let it cook all afternoon on low. I served the chowder in toasted sourdough bread bowls. My family was so impressed and absolutley loved this! Yummy!

Oven Brown Rice

Reviewed: Jan. 22, 2008
This rice dish was Fantastic! I made a few changes as other reviewers suggested. I used 2 tbsp. olive oil and omitted the butter. I used 1/2 tsp. garlic salt and about a 1/4 tsp seasoned salt. I think with all the broth you could really leave the salt out altogether, although with the amounts I used it was great. I also chopped about 1/4 cup of yellow onion and crushed 2 garlic cloves and threw them in there. I then covered the casserole and cooked it for 1 1/2 hours at 350. My whole family LOVED the rice and asked me to please double the recipe next time. This from people who usually turn their noses up to brown rice when I try to serve it! Thank you so much for the recipe!

Cinnamon Rolls I

These were outstanding and so simple to make! We ate most of them without frosting and they were still delicious! Next time I might try a cream cheese frosting, but even without these were delicious!

Pork Chops with Burgundy Mushroom Sauce

Reviewed: Jul. 26, 2007
This was excellent! My whole family really enjoyed it. I added flour like one of the other users suggested to thicken the sauce and have it over brown rice. I also doubled the amount of liquid ingredients and added more broth than wine. Turned out great with no left-overs!

Chantal's New York Cheesecake

Reviewed: Jan. 1, 2008
This cheesecake was fantastic! I did make a few modifications to the recipe after reading the reviews. I baked it in a water bath as suggested by other reviewers and it worked perfectly. I also sprayed the bottom and sides of my springform pan with Pam before adding the crust and cheesecake batter. It pulled apart from the sides super easy and didn't crack even a little bit. I decreased the flour to 2 tbsp and hand mixed the ingredients after I blended the cream cheese and sugar together. I also added about a 1/4 cup of sugar to the crust and about 2 more tbsp of butter to the crust mixture. It was sooo good! I do have a couple of things I would do differently next time. I would recommend mixing each ingredient into the mixture individually. I put my flour and vanilla in at the same time and the vanilla clumped with the flour, so there were little spots of vanilla in the mixture. I am also going to use less vanilla next time, like only about 1 teaspoon instead of a tablespoon. The texture of this cheesecake was fabulous! I let it sit in the oven overnight because I baked it in the evening. I then refrigerated it all day before we finally cut into it. It really turned out GREAT. And the flavors seem to get better each day as the cheesecake ages. Thank you so much for the recipe!!!

Whole Wheat Seed Bread

Reviewed: May 28, 2013
Really good recipe! I made a few changes only because I didn't have the flax meal or cracked wheat so instead I used 1/2 cup oat flour and 3/4 cup chia seeds. I also didn't have molasses so I used 1/2 cup organic maple syrup. I ended up needing probably about 2 cups more flour than the recipe called for. Makes 4 beautiful loaves of bread! The bread rose beautifully and cooked perfectly in about 40 minutes. Very dense but at the same time fluffy and a wonderful flavor. Definitely recommend this recipe but don't be afraid to make a few changes if you don't have everything on hand!

Super recipe! My kids and husband loved it. I was afraid they were going to think it was too spicy, but they didn't. They even liked the bell peppers and onions, which all of them usually don't like.
