Chocolate Covered Cherries II

The better qulaity chocolate you use the better results you will have. Ghiradelli is the only brand I use and never have trouble with it I also hardly ever add any thing to the chcoclate. If I want to thin it as bit I may add butter but never oil.

Cake Balls

I agree they are much easier to coat if you freeze then first. I would suggest useing a candy dipping fork you can get them in the candy making or cake decorating area of most craft stores. I have seen them at walmart also wilton makes one that is a loop and one that is like a 2 pronged fork. This is all would ever use fof dipping any thing like this.Tooth picks just don't like to stay in things sometimes.

Vanilla Punch

This a fall back when I cater and they do not want a fruit punch. It helps to cut the sweetness if you add a bottle of club soda or tonic water.

Vintage Lemonade

For all the people who said this is bitter you do not want the white part of the rind. A microplane works great to get just the yellow zest and that is where all the flavor is. It allows all the oils to release into the suger and the into the simple syurp you are making.

Chocolate Walnut Rum Balls

Just a tip to take your rum flavor to another level. Add two vanilla beans to your bottle of rum and let it sit for a month. Shake once a week sure you have to plan ahead but it is worth it.

Chocolate Covered Orange Balls

Had to give 4 stars as I have not made yet but with they sound like they should be great. Just a note about them being hard to dip. Use the best cholcolate you can find not cheap chips. I like Giradelli chips they melt to a great dipping chocolate. Invest a couple dollars and get a dipping spoon from a craft store wilton make a plastic loop one and also a fork. I like the loop best it make the job much less work

Hot Onion Dip

Makes a great cracker dip or spread hot or bake and then chill. Makes a realy good filling for a stuffed cherry tomato as well just bake then chill and pipe in with a pastery bag.
